What are the responsibilities and job description for the Dietary Chef Manager position at Fresh Ideas Management?
Fresh Ideas is looking for a passionate, motivated Chef Manager to lead our kitchen staff in the production, preparation, and presentation of all food for a Senior Living Retirement Community located in Hannibal, MO. At Fresh Ideas, we believe in providing high-quality, nutritious, fresh foods made from scratch. Every client is different, so our approach to food for each client is different. It is critical that the Chef possess a strong culinary vision that results in a superior culinary program that produces and presents superior food.
As our Chef, you will be responsible for ordering, preparation, cooking, and presentation of all food served to residents, staff, and guests in the dining areas of the facility. This is also to include the special diet needs of various residents. You will schedule staff in accordance with budgeted staffing ratios and provide the culinary team with sufficient training and supervision. Candidates must have experience in the healthcare or long-term care foodservice segment.
Essential Functions:
- Create seasonal cycle menus that are consistent in variety, cost-effective, and exciting and create/manage effective production lists for the cooks
- Proven ability to effectively manage, train, and supervise employees
- Meet all timelines for menus and ordering. Perform quality work within all deadlines
- Work independently while understanding the necessity for communicating and coordinating work efforts with other employees and departments
- Knowledge of State and Federal food regulations as applied to skilled and assisted living facilities in regards to therapeutic diet production and proper portioning
Qualifications:
- Current ServSafe certification is required in accordance with State/County law or must become ServSafe certified within 30 calendar days of hire
- Associate’s degree or Chef’s Certificate from accredited culinary school or association preferred but not required
- Minimum of three years’ experience in kitchen management, inventory /ordering, plate cost analysis, and menu development
- Certified Dietary Manager or minimum of 5 years long term care management
- Must have a minimum of five years of hands-on, fast-paced culinary experience
- Considerable knowledge of quantity food production and serving techniques, food safety/sanitation requirements and procedures
- Strong leadership, communication, and organizational skills
- Ability to interact positively with residents, client, and other personnel and the public
- Willingness to work a variable schedule including nights, weekends and holidays
