What are the responsibilities and job description for the Cook - Full-Time position at Harpoon Brewery?
POSITION OVERVIEW
The Lead Cook will ensure the Kitchen operates according to the real time demands of Long Trail and the service and quality standards of MBBC. The Lead Cook plays a critical role in maintaining a safe, clean, and highly productive work environment, in addition to maintaining the MBBC culture.
POSITION RESPONSIBILITIES:
These responsibilities include but are not limited to the following:
- Measure and assemble ingredients for menu items within your designated station
- Act as a lead to the part time kitchen staff providing guidance and support where needed
- Provide performance feedback on Kitchen staff to management to be tracked and used for professional development
- Collaborate with the kitchen staff and management to prepare meals during dining hours
- Maintain accurate food inventories for you designated areas
- Properly store food items at appropriate temperatures
- Rotate stock items as per established procedures
- Restock designated prep area for subsequent shifts
- Ensure daily food prep list has been completed and communicate any variances to management
- Ensure that the food prep area and kitchen are cleaned and sanitized at the end of your shift
- Maintains professional relationships with all coworkers.
- Follows checklists and standard operating procedures.
- Maintains a safe, clean, organized, and stocked work area.
- Maintains full knowledge of menus, recipes, and other pertinent information.
- Answer questions from staff regarding menu ingredients and allergy concerns for new menu items.
- Responsible for constant sanitation, organization, and proper food handling.
- Prepares work area for opening, mid-shift, or closing in accordance with company standards.
- Attend regularly scheduled department meetings
- Performs other related duties as assigned by the Culinary Manager or manager-on-duty.
REQUIREMENTS/EXPERIENCE/SKILLS:
- Ability to work in a fast-paced kitchen environment.
- Ability to work in a team environment.
- Ability to follow strict food safety requirements.
- Ability to complete ServeSafe course and pass exam.
- Complete opening and closing checklists when necessary
- Sign-off on opening and closing checklist when necessary
- Maintains a professional appearance at all times.
- Communicates with management to ensure guest satisfaction.
- Initial contact for all kitchen related shift coverage.
- Reports to work as scheduled, in uniform, and ready to work.
- Be able to work nights, weekends and holidays.
- Team player.
- Hard worker.
- Honest.
