Under the supervision of the Executive Chef, this position is responsible for the oversight of all daily operations of the Food Services department. This position, with assistance from the Executive Chef, is responsible for all kitchen/Food Services oversight, including but not limited to personnel management and growth; coordination of food costs and labor; creative menu development and implementation; kitchen, facility, and equipment maintenance; food inventory purchasing and control. This position is responsible for meeting and exceeding company standards while maintaining a positive work environment, high levels of product quality, cleanliness, productivity, and efficient use of company resources. Additionally, this position performs and enhances the completion of daily functions of the assigned facility through delegation and development of culinary managers and the Food Services team. This position is responsible for educating volunteers/trainees in the culinary arts job training program, using the approved culinary training curriculum.
Duties and Responsibilities:
- Assists the Executive Chef in planning regular and modified menus according to established guidelines that include healthy eating plans, dietary restrictions, and food allergies.
- Follows standardized recipes, ingredient portions and presentation standards including tasting completed meals to ensure quality.
- Prepares all food items, as directed, in a sanitary and timely manner with the Food Services team.
- Completes and utilizes the Daily Operation Procedure work sheets.
- Establishes and maintains cleaning and maintenance schedules for equipment, storage, and work areas. Also ensures Food Services staff follow and complete schedules as assigned.
- Maintains inventory of food and non-food supplies to stay within established guidelines while ensuring the necessary product is available when needed.
- Works with Executive Chef regarding utilization of food products, while staying within New Freedom’s guidelines.
- Complies with Federal, State, and Local Health and Sanitation regulations and department sanitation procedures.
- Provides direct supervision, support, coaching, and development of the Kitchen Manager and Food Services staff, including but not limited to:
- Ensuring Food Services staff receive ongoing training and development with food preparation, safe handling, operation of equipment, and food safety and sanitation.
- Effectively hiring, training, and professionally developing staff.
- Providing ongoing feedback and evaluation of staff and team performance.
- Ensuring staff and department compliance with required credentials and/or training requirements.
- Effectively working with the Executive Chef to address performance challenges within the department, partnering with Human Resources as appropriate.
- Participates in and attends department meetings, staff/leadership development opportunities, and other professional programs, as appropriate.
- In addition, all other duties as assigned.
