SUMMARY :
The Assistant Director of Food & Beverage is responsible for assisting in directing and overseeing all food and beverage operations, ensuring that operations run smoothly, efficiently, and meet the established quality standards. This role supports the Director of Food & Beverage in executing strategic initiatives, maintaining operational excellence, and delivering a Five Star Experience to both guests and team members. The Assistant Director is dedicated to fostering a positive and professional work environment, where service excellence and teamwork are prioritized.

Manage directly and indirectly all employees of the Food and Beverage Department. Adhere to the Tribal organization’s policies, procedures and applicable laws.
Responsible for the overall direction, coordination, and evaluation of this unit.
Carry out supervisory responsibilities which include but are not limited to: interviewing and training employees; planning, assigning, and directing work; appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems.

- Support the Director of Food & Beverage in coaching, training, and mentoring team members to build skills and ensure the consistent delivery of excellent service.
- Assist in planning and managing menus, ensuring effective utilization of food surpluses and leftovers based on guest volume and marketing trends.
- Assist with staffing and scheduling, ensuring optimal allocation of service employees based on expected guest traffic, promotional events, and seasonal activities.
- Communicate regularly and effectively with vendors and all divisions of the Food & Beverage operation to ensure a steady supply of food and beverage resources.
- Collaborate with the purchasing department to manage vendor relationships, purchase specifications, and inventory levels, ensuring cost control and quality.
- Monitor and analyze data for food and beverage operations, including pricing strategies, portion control, inventory management, and labor cost controls.
- Help oversee and ensure proper requisitioning, receiving, storage, and issuing of all foodstuffs and service supplies in coordination with the Director of Purchasing.
- Evaluate inventory performance and suggest improvements for inventory turnover, cash flow, and storage management.
- Review menu items with leadership team, analyzing recipes, cost breakdowns, and determining appropriate pricing for each item.
- Implement and enforce food and beverage service policies and controls to maximize sales and minimize costs, using menu-engineering strategies.
- Supervise food and beverage service personnel to ensure efficient production and delivery of food and beverages in accordance with service standards.
- Monitor food preparation, service speed, and service volume to ensure compliance with food and beverage standards.
- Develop special service procedures and assist in creating departmental operational and service manuals.
- Help establish productivity standards, labor cost forecasts, and cost-volume-profit relationships, ensuring financial targets are met.
- Enforce nutrition, sanitation, and safety standards for all food and beverage operations.
- Maintain strong communication with all Directors and Managers, ensuring seamless collaboration across departments.
- Assist with the development and implementation of departmental policies and procedures, ensuring compliance with all regulations.
- Oversee necessary record-keeping, ensuring all financial and operational data is accurate and up to date.
- Stay informed about competitive trends in the food and beverage industry, making recommendations to stay ahead of competitors.
- Foster a positive work environment that emphasizes safety, quality, and productivity.
- Ensure adherence to safety policies and procedures, and participate in scheduled safety meetings and training.
- Make fair and informed decisions, addressing any operational issues or challenges.
- Other duties as assigned by the Director of Food & Beverage.

Qualifications
EDUCATION AND EXPERIENCE (MUST BE DOCUMENTED):
- Bachelor’s degree preferred in related field (or equivalent experience).
- Five (5) to Seven (7) years equivalent Supervisory/Management experience.
- Must pass periodic random drug screens.
- Must be able to pass background suitability investigation.
- Must obtain a Tribal Gaming License.
- Must obtain all other applicable certifications and licenses.
- Must provide proof of eligibility to work in the United States within 72 hours of employment.

- Some enterprises are open 24 hours per day, 7 days per week; therefore, you must be flexible to work any and all hours.
- Must be available for emergency calls 24/7.

- Surveillance cameras and audio equipment monitor the premises recording activity throughout most of the facilities on 24 hours per day, 7 days per week basis.
