Position Overview:
The Concession Chef reports directly to the Executive Chef to ensure all concession stand food is prepared in a timely manner in accordance with the daily need.
This position is a Seasonal Staff position from mid-April through September according to the season of the United Shore Professional Baseball League at Jimmy John's Field in Utica, Michigan.
Qualifications
- Minimum 5 years' experience in culinary arts, including previous experience working in the back-of-house in a high-volume restaurant or banquets department and in a management role.
- Ability to read and understand recipes and food abbreviations.
- Capable of working in a fast-paced environment with a high level of attention to detail.
- Ability to work as a team player, following procedures and taking directions.
- Basic math skills, with the ability to calculate and follow recipe measurements,
- Knowledge of best practices for monitoring of food and labor cost, menu development, costing, ordering, and inventory procedures.
- Ability to follow and write bulk recipes
- Ability to lead, coach, develop, and train kitchen team members
- No degree required
- ServSafe certification preferred
Responsibilities
- Assist & oversee daily activities of kitchen staff to ensure concession stand food is executed in a timely manner.
- Assist the Executive Chef and Executive Sou Chef with daily supervision and production of all operations and events.
- Oversee inventory of food product; coordinate product ordering.
- Maintain a safe, clean, and organized kitchen that complies with state and local health department regulations.
- Follow supervisor's assignments for food production and prepare food and beverage products for guests by following recipe guidelines, using proper preparation techniques, and sanitation guidelines.
- Set up, operate and clean kitchen equipment, according to correct procedures as well as keeping workstations clean, organized, sanitized, and sufficiently stocked.
- Responsible for closing of concession stands at games.
- Responsible for weekly detailing / cleaning of concession stands / equipment.
- Work cooperatively with team members and management.
- Follow supervisor's assignments for opening and closing procedures.
Physical Requirements
- Must be able to lift 20 lbs or more.
- Ability to stand for long periods while also bending, lifting, and reaching.
- Ability to move rapidly and coordinate multiple orders.
- Exposed to variable temperatures.
