Job Summary

- Native American hiring preference for qualified candidates.
- Cook in bulk while minimizing waste; following prep lists & directions from Supervisors
- Weigh, measure, mix ingredients according to recipes using various kitchen utensils and equipment; season & cook food according to recipes
- Regulate temperature of ovens, broilers, grills, and deep fryers
- Verify that prepared food meets requirements for quality and quantity
- Maintain proper stock and prep for day and next shift
- Properly wrap, date, and store leftover food as needed
- Prepare raw products or prepared food items properly
- Serve prepared food items in a timely fashion
- Ability to read, use and create recipes and creative nightly specials
- Understand all recipes, proper portion control & consistent plate presentation according to our quality standards & authorized recipes (refer to menu, Kitchen notebooks with pictures if necessary)
- Maintain a clean workstation; maintain a well-stocked workstation to facilitate the next shift, communicating to Supervisors & co-workers to help promote teamwork on both projects
- Must exhibit a sense of urgency to fulfill orders or tasks to meet our customer needs and to be a team player; being helpful, productive & professional in manner
- Is friendly, courteous, and helpful to other associates and customers even in stressful conditions of a quick-paced kitchen, often accompanied by intense heat
- Is aware of and practices sanitation policies and regulations
- Perform miscellaneous duties as assigned
- Must follow all safety and sanitation rules and regulations
- Follow all general and department policies and procedures
- TWO (2) years experience in institutional food preparation preferred
- Knowledge of proper preparation technique
- Ability to memorize certain recipes to ensure consistency
- Thorough knowledge of all institutional kitchen equipment including broiler, sauté, fryer
- Knowledge of proper preparation technique
- Must possess outstanding interpersonal communications skills to effectively interface with guests and/or team members
- Strong organization, prioritization, and multiple-tasking skills
- Strong attention to detail, and a commitment to quality
- Highly adaptable with the ability to adjust to change in a positive manner
- Ability to apply basic mathematical concepts such as adding, subtracting, multiplying and dividing
