Summary
The meat cutter is responsible for preparing, cutting, trimming, portioning, and packaging various cuts of meat for sale to customers, both retail and wholesale while maintaining quality, sanitation, and safety standards. Other responsibilities include inventory management, customer service, ensuring compliance with food safety standards and quality control measures, and knowledge of meat processing techniques while adhering to cleanliness and safety protocol.
The work environment will typically be standing at the cutting station for long periods, lifting heavy meat slabs, working with sharp tools, and being exposed to the cold temperatures of the refrigerator and freezers.
The Ponca Tribe of Nebraska is a federally recognized Tribe with its ancestral homeland located in Niobrara, NE. The Tribe does not have a reservation in the classic definition; rather, the Ponca Restoration Act defined its jurisdiction as a 'Service Delivery Area' comprised of 15 counties throughout parts of Nebraska, Iowa, and South Dakota. Essential Responsibilities And Duties
- Cutting and trimming meat: Breaking down whole carcasses into smaller cuts like steaks, roasts, ground meat, and more, using knives, saws, meat grinder, slicer, scale and other specialized tools
- Weighing and packaging: Accurately weighing meat portions and packaging them for sale, including labeling with relevant information like cut, grade and best-by date.
- Customer service: Answering customer questions about meat cuts, providing recommendations for cooking methods and fulfilling special orders.
- Maintaining sanitation: Keeping the work area clean and sanitized, including properly cleaning and sharping knives and equipment.
- Inventory management: monitoring meat stock levels and rotating products to ensure freshness.
- Quality control: Inspecting meat for quality and removing any defects of blemishes
- Following safety procedures: Adhering to all food safety guidelines, including proper handling of meat products and maintaining appropriate temperatures.
- When needed, assist with truck, cashier duties and alcohol sales.

Qualifications
Minimum:
- Experience in meat cutting or related field preferred
- Knowledge of meat types, cuts, and preparation methods
- Ability to use specialized tools safely
- Familiarity with food safety and sanitation guidelines
- Physical stamina to handle heavy lifting and prolonged standing
- Excellent attention to detail and ability to work in a cold environment.
- Must be at least 19 years of age
