Company Overview: Hyatt Regency Green Bay is seeking a Sous Chef.  Did you know we are located in the heart of downtown and home of the Green Bay Packers? The hotel is minutes away from major sporting events, cultural activities, entertainment, museums, and attractions.  We are the largest, full-service hotel in the market with 241 all-suite guest rooms and 80,000 square feet of space.

Position Summary: The Sous Chef will be responsible for managing a specific department within the kitchen, and the entire kitchen operation in the absence of the Executive Sous Chef and/or Executive Chef. The ideal Sous Chef will accomplish their tasks by monitoring the daily functions of the culinary department, including providing support and guidance to the culinary team, ending in a positive guest experience.

 

Detailed Description:

  • Plan, direct, and supervise food preparation and cooking activities.
  • Ensure proper safety and sanitation of all kitchen facilities and equipment.
  • Assist with determining how food should be presented, and create decorative food displays.
  • Develop and implement creative menu items that adhere to Hyatt brand standards.
  • Analyze recipes to assign prices to menu items, based on food, labor, and overhead costs.
  • Assist in planning, coordinating, and implementing special events and holiday functions.
  • Monitor food production, ordering, cost, and quality and consistency on a daily basis.
  • Check the quantity and quality of received products.
  • Manage hourly culinary colleagues through scheduling, training, coaching, evaluating and hiring.
  • Coach the team towards achieving exceptional guest service and employee satisfaction results.
  • Assist with implementation and maintaining quality standards.
  • Abide by all organizational policies and procedures.

Qualifications:

  • Skills and knowledge of kitchen operations
  • A true desire to exceed guest expectations in a fast-paced customer service environment
  • Capable of producing a consistent product in a timely manner
  • Culinary education and/or on the job training, hotel experience preferred
  • Must be able to work independently and in a team environment
  • Most importantly, HAVE FUN!
