General Purpose

To have a passion for the craft of BBQ and a desire to maintain the highest food quality according to all Sonny’s and ACGBBQ standards. To take ownership of the food and food quality from your location’s PIT. This includes preparation and maintenance of quality standards for food preparation, safety, sanitation and cleanliness. 


Essential Duties

Our Pitmasters are tasked with managing the BOH operations to ensure our guests experience authentic BBQ and the exceptional hospitality they have come to know and expect every Sonny’s location. Expectations include: 

  • Develop and implement policies and procedures to ensure all food is prepared and cooked to quality standards.
  • No Short Cuts
  • Hit the BULLSEYE
  • Make sure all cooked and uncooked products are rotated correctly.
  • Adhere to, implement, and enforce sanitary and food preparation guidelines. 
  • Ensure the kitchen area is clean and sanitary. 
  • Monitor and set accurate pars for consistent and controlled truck ordering.
  • Receive all incoming products, check quality and quantity, and store in its proper place.
  • Execute all levels of Caterings, including our Tier 2/higher end caterings
  • Lead team members to ensure proper inventory for events and caterings.
  • Develop and implement strategies for purchasing aligned with company’s food and beverage objectives. 
  • This requires an understand the food cost of each item and how to troubleshoot when issues arise; 
  • Develop and implement strategies to manage Actual vs. Theoretical food/inventory costs. 
  • Control operational costs and identify measures to cut waste. 
  • Be a Brand Ambassador- Visit with guests to get feedback and share passion for BBQ.
  • Develop and implement strategies for attracting and retaining customers; 
  • Deliver the Sonny’s experience for guests; 
  • Present a professional appearance and proper language when addressing guests, co-workers, and management. 
  • Able to train the BOH team members on proper cooking and reheating standards for the best quality product.
  • Supervise BOH team members
  • Delegate day-to-day responsibilities; 
  • Monitor BOH team members performance; 
  • Collaborate with management team regarding selection, discipline, and advancement of BOH team members. 
  • Communicate with management team any challenges that might occur to properly execute standards.
  • Appraise BOH team members’ performance and provide feedback to improve productivity and/or performance; 
  • Collaborate with management team regarding employee complaints and grievances; 
  • Perform any other work-related duties specified by upper management.

QUALIFICATIONS

  • Able to work independently and as part of a team.
  • Able to handle multiple tasks simultaneously.
  • Can be calm under pressure.
  • Efficient time management skills. Ability to follow instructions and procedures.
  • Able to work with and troubleshoot smokers and hot boxes. 
  • Able to stand for long periods of time.
  • Able to work with sharp knives.
  • Must be 18 years of age.
  • Attend and successfully complete ongoing training or certification programs required by the company, federally, or by the state as it relates to this position.

Physical Demands and Work Environment

  • The physical demands described here are representative of those that must be met by any BOH team member to successfully perform the essential functions of this job. Reasonable accommodation may be made to enable qualified individuals with disabilities to perform the essential functions.
  • Pitmasters are regularly required to stand for prolonged periods of time.
  • Must be able to handle food products and equipment.
  • Ability to communicate effectively with other team members and guests, including speaking and listening. 
  • The position requires continuously walking, standing, bending, lifting, reaching, crouching, touching, feeling, tasting, talking, hearing, wiping, and smelling. 
  • Sonny’s is a fast-paced environment and requires constant human interaction and movement.
  • Pitmasters must be able to frequently lift and/or move up to 90 pounds.
  • While performing the duties of the job, Pitmasters regularly work with or near moving mechanical parts.
  • Pitmasters may be exposed to wet and/or humid conditions and are required to work with cleaning chemicals. Frequent washing of the hands is required. 
  • As a Pitmaster, you must have the ability to perform the essential functions of the job for up to an 8-hour shift.
