SHIFT INFORMATION
The kitchen is open 7 days/week. This position primarily works four 10-hour shifts per week, either Sunday - Wednesday or Wednesday - Saturday. Shifts include early morning (1:00am-11:00am) or early evening (9:00am-7:00pm) and are based on seniority. Flexibility is required for sick and vacation coverage.
WAGE
New Food Service Coordinators will start out at a Level I pay rate of $24.25/hr. As new Food Service Coordinators acquire the required skills, they can promote to a Level II pay of $26.75 /hr. and then to a Level III pay of $29.00/hr.

Essential Functions
Food Service Operations: Supervise and lead the inmate kitchen staff, ensuring smooth, efficient, and safe operations. Contribute to the overall success of culinary services by overseeing bulk meal preparation for both inmates and jail staff, maintaining the highest quality standards. Manage food inventory, ensuring stock and supplies are properly tracked and available when needed.
Instruction and Training: Assign tasks and provide clear guidance on work expectations, methods, and procedures to inmates working in the kitchen. Continuously train and mentor inmates on food service and sanitation practices. Offer feedback to the Food Service Supervisor on inmate performance and recommend retention decisions for kitchen work crews.
Quality Control: Monitor and ensure the quality of work performed by inmate workers, upholding high standards across all tasks. Guarantee the proper preparation and delivery of meals to housing units, while ensuring all sanitation practices meet or exceed City-County Health Department standards.
Conflict Resolution: Address and resolve conflicts among inmate workers, promoting a positive and productive work environment. Document and complete incident reports related to behavior issues, injuries, and any other risk management concerns, taking appropriate disciplinary actions when necessary.
Menu Optimization & Special Diets Management: Adjust and optimize menus by considering factors such as quantities, recipes, preparation times, serving instructions, nutritional needs, and the efficient use of leftovers. Ensure that special dietary meals are prepared according to established guidelines, are clearly labeled, and delivered accurately to jail housing units.
Flexibility and Security: Be available for all shifts, including evenings, nights, weekends, and holidays. Ensure strict control over kitchen tools, including properly securing dangerous tools when necessary.
Job Requirements
Nice to Haves:
- Supervisory skills for inmate kitchen work crews, knowledge of large-scale food preparation, familiarity with health and sanitation regulations, and the ability to work with diverse populations.
- Completion of standard high school/trade school course with instruction in institutional cookery or equivalent combination of education and experience
Must Haves:
- Must be at least 18 years of age and possess a high school diploma or equivalent;
- Strong communication, conflict resolution, and initiative are key!
Other Requirements
- Must conform to all health and sanitation regulations and be food safety certified;
- Must appear before an oral board and complete a polygraph and background check prior to entrance on duty;
- This position has been designated safety sensitive and therefore the incumbent is subject to random drug testing.
Work Environment & Physical Demands
- Must have sufficient physical ability to: stock food, prepare, cook, and serve proper meals, and clean the kitchen and kitchen equipment.
- Must be able to stand for extended periods of time and be able to bend, squat down to the floor, and reach overhead to stock the storeroom and put freight deliveries away;
- This position is located in a potentially hostile environment where the incumbent will work directly with inmates who have access to kitchen tools and supplies.
