Job Summary:
Provides oversight and direction for the Nutritional Services department. Sets strategic goals and meets budgetary goals. Works with physicians, clinical nutrition, patients, staff and retail customers to provide the highest possible standards of food quality purchased and produced at the hospital. Supervises and directs the activities of various levels of assigned personnel using both professional and supervisory discretion and independent judgement.
Job Requirements:
Education and Work Experience:
- Bachelor’s Degree or equivalent combination of education/related experience: Required
- Master's Degree: Preferred
- Seven years’ related experience: Preferred
- Five years' leadership experience: Preferred
Licenses/Certifications:
- ServSafe certification or equivalent: Required
- Certified Dietary Manager (CDM): Required
- ServSafe (SERVSAFE): Required
Essential Functions:
- Oversees the day-to-day food service operation. Oversees all aspects of Quality Food Production including meat and vegetarian entrée/hot food production, cold food/deli/pantry production and baked goods production. Coordinates timely, safe, attractive preparation of all food items served to patient and non-patient customers
- Collaborates on menu planning with the Registered Dietitian(s). Plans for and purchases food for the hospitals food service program, the Bistro and for catered events. Ensures adequate and appropriate food supplies to meet the menu needs and surplus and disaster supplies per regulation. Maintains required records including food production, inventory, income/expense, meal counts and personnel records.
- Ensures readiness for all regulatory inspections. Ensures proper food safety and sanitation procedures are followed. Ensures staff is properly educated and trained in proper food safety and serving procedures. Coordinates the purchase and maintenance of department equipment, including refrigerators, stoves, microwaves, ice machines and dishwasher. Coordinates the safe operation of all food service equipment in the department, including vending machines. Assures that the principles of sanitation and safety in food production/service are followed and enforced. Responds to customer concerns and complaints. Directs the cleaning of the kitchen, equipment and dining area.
- Writes and maintains current departmental performance improvement plans, employee education/in-service plans, meeting minutes and business correspondence. Plans and manages the budget for the department. Approves department invoices. Ensure compliance with department policies and procedures and regulatory requirements.
- Directs Nutrition Services employees including performance evaluations, employee engagement and employee relations. Oversees employee records and complete paperwork to comply with laws and regulations.
