Summary:
As directed by the Cook II / Head Cook, this position serves food, cleans and maintains the kitchen and dining room facilities. the Food Service Worker is directly involved in supervising detainee volunteer workers and maintaining kitchen safety and security.
Please Note: This position is contingent upon contract award.
The pay rate for this position is $17.57/hour $7.22/hour H&W.
Essential Duties and Responsibilities: (including but not limited to)
- Retrieve products from dry storage and/or cooler. Wash, peel, scrape, and cuts vegetables and fruits and other food products.
- Prepare simple salads, bread and desert products.
- Slice cakes and pies.
- Make coffee, tea and other beverages for delivery to housing units.
- Serve portions of food on trays or plates, and pours beverages.
- Prepare dining and serving areas by setting up counters, hot and cold serving lines and tables.
- Places food containers in serving area.
- Scrapes, washes and sorts dishes, glassware and silverware. Clean kitchen equipment, pots and pans, counters and tables.
- Removes all trash and cardboard and disposes in the trash compactor.
- Sweeps and mops floors. Use shop-vac as instructed.
- Directly supervise detainee non-citizen volunteer workers assigned to their area.
- Under direction will measure, stir, cut, grind, chop and season ingredients according to recipes.
- Drive a food service box truck as instructed.
- Load and unload food carts and beverage containers into a box truck. Deliver food carts to the housing units.
- Pick up food carts after meals is completed. Load and unload food carts from the food service truck to the kitchen.
- Prepare and maintains proper levels of cold sack lunches for transfers.
- Prepare, serve, and clean staff dining area if so assigned.
- Draw required cooking utensils from kitchen storage areas.
- Load and unloads delivery trucks at the food service department as necessary.
- Oversee a crew of detainee volunteer workers assigned to serve meals and clean kitchen and dining area.
- Observe the work of detainee volunteer workers in the kitchen, and provide instructions in kitchen safety practices and more efficient work methods.
- Observe and enforces security procedures; assesses the attitude and temperament of detainee volunteer workers; reports disciplinary and security problems to Detention staff.
- Maintain security, control, and proper issuance of tools and chemicals.
- Assist in providing safety training to staff and detainee volunteer workers.
- Routinely conducts searches of all areas of food service for weapons and contraband.
- Perform any other duties as needed or required.
Minimum Qualifications:
- Must be at least 21 years of age
- High school diploma or equivalent (GED)
- Possess a valid Food Hander Certification.
- Possess a valid driver’s license.
- Knowledge and experience with PBNDS, ACA, PREA, OSHA and other federal regulations.
- US citizen or person lawfully admitted into the United States for permanent residence.
- Must have resided in the US for the last five (5) years (unless abroad on official US government duty).
- Must be able to obtain a favorable Suitability for Employment determination through ICE.
- Must have a Social Security card issued by the Social Security Administration.
Preferred Qualifications:
- Experience in institutional food service
- Bilingual (Speak, read, and write in Spanish)

Working Environment:
The work environment characteristics described in this job description are representative of those an employee encounters while performing the essential duties and responsibilities of this job. Work is performed in a kitchen environment, may be subject to temperature and noise level changes.
Works in a busy kitchen environment; however, work areas may include all areas of the secured facility. Works where slips & trips may occur frequently and often exposed to sharp objects. Exposure to blood borne pathogens.
Physical Demands (including but not limited to):
- May be required to bend and stoop frequently and occasionally kneel or crouch. Often climbs stairs and works with arms above the shoulder.
- May be required to move heavy equipment.
- Required to lift 50 lbs or less frequently and often lifts 50-65 lbs.
- May often be required to grip, squeeze and repetitively use fine hand movements.
