The Executive Chef will collaborate with the General Manager and the Assistant General Manager to lead a talented and versatile team, providing outstanding and memorable guest experiences. The position will promote an exceptional dining experience by providing creative menus and the highest-quality ingredients, prepared consistently and attractively. In addition to leadership and team-building skills, an innovative and energetic approach to menu planning and food preparation is essential. The position requires visibility, genuine enjoyment of team member engagement, authentic enjoyment of engagement, and a meticulous customer service attitude.

  • Collaborate with the General Manager to manage performance, including using disciplinary processes as needed with proper documentation.

Position Requirements :

  • Bachelor’s degree in culinary arts or a related field and / or formal culinary training and education from an accredited culinary school.
  • Minimum of eight years of experience in the Culinary Industry, Hospitality Management, or Food Service Management
  • Proven experience in menu creation and leadership within a high-volume, upscale restaurant and event setting.
  • Current ServSafe Manager certification, local county Food Handler certification, and OLCC permit required.
  • Strong ability to teach and maintain programs for technique development, culinary foundations, and operational systems at all levels.
  • Demonstrated ability to work with and maintain relationships with local farmers to highlight unique regional ingredients as appropriate.
  • Strong people skills to engage positively with management, staff, members, and the public.
  • Ability to produce high-quality work efficiently and accurately.
  • Demonstrated reliability, punctuality, and professionalism.
  • Excellent communication skills.
  • Strong organizational and multi-tasking capabilities.
  • Ability to manage stress and maintain composure.
  • Problem-solving aptitude.
  • Proficiency in Microsoft Office 365.
  • Position Responsibilities :

  • Supervise all back-of-house (BOH) hourly team members, including sous chefs, cooks, prep cooks, and dishwashers.
  • Assist with recruiting, hiring, and training BOH staff while supporting ongoing development programs.
  • Create, communicate, and maintain an FOH Menu Training Guide, including individual plate photos.
  • Act as the culinary face of Amaterra Bend, including preparing winemaker dinners, special member dining events, and private events.   Must be warm and comfortable speaking to members and guests and at private functions to discuss our culinary direction and get folks excited about their experience.
  • Must be completely comfortable and engaged with being present in the dining room speaking with and checking in on key members and guests. Manage and control culinary expenses to ensure the budget is achieved and managed appropriately.
  • Manage menu item pricing to ensure the highest profitability level is maintained.
  • Take ownership of PM dinner service by expediting as needed.
  • Foster an environment of growth and development for BOH team members.
  • Lead the BOH staff in attending all required meetings and stand-ups.
  • Partner with the General Manager in Bend to develop menus aligned with Amaterra’s brand and wine offerings.
  • Create and maintain a collaborative relationship with the Executive Chef in Portland to ensure that quality and menu collaboration occurs, as appropriate.
  • Support the development of standardized recipes and techniques to ensure consistency, quality, and cost control.
  • Regularly inspect kitchen operations and storage to uphold Amaterra's excellence, safety, and sanitation standards.
  • Conduct line checks to maintain food quality and consistency.
  • Review reservations and coordinate prep and setup plans.
  • Oversee inventory management and purchasing to align with sales and operational needs.
  • Inspect incoming orders for quality and accuracy.
  • Identify and address equipment maintenance needs.
  • Provide support online and perform kitchen duties as needed.
  • Maintain open and consistent communication across all departments.
  • Assist in training and informing staff about menu updates.
  • Assist in planning and executing private dining events in coordination with key stakeholders.
