What are the responsibilities and job description for the Food Program Director position at AMERICAN YOUTH FOUNDATION?
Position Purpose
The Food Program Director is a year-round position that is responsible for providing meal service for all Miniwanca programs. The Food Program goal is to serve healthy, balanced, timely, and educational meals that successfully address dietary and allergen-restriction needs.
Essential Functions
- Prepare all menus including appropriate dietary and allergen free options or participants and staff. Create high quality, healthy, and nutritious meals in line with the values of the AYF. o Miniwanca serves participants and staff with dietary needs that require a glutenfree, vegetarian, vegan, and dairyfree menus as well as multiple participants and staff with severe food allergies.
- Manage the hiring, training, development and direct supervision of all food program staff while serving as a shift manager, assuring quality and quantity.
- Develop and manage the Food Program budget while maintaining accurate record keeping for accounting purposes.
- Execute purchasing according to menus and inventory.
- Manage employee schedules.
- Create and implement cleaning standards and schedules.
- Open and close kitchens per seasonal requirements according to current procedures; consolidate freezer and cooler use to conserve energy costs.
- Strictly enforce ACA, ServSafe, and state sanitation standards/regulations in kitchens, dining halls and dish rooms.
- Serves as a member of the Miniwanca Leadership Team. Collaborate with interdisciplinary team to ensure successful operation of Miniwanca programs.

Secondary Functions
- Attend staff meetings and facilitate kitchen staff meetings.
- Review profit and loss statements with Finance Manager & Director of Miniwanca.
- Keep inventory of all kitchens, dining, and dish room supplies.
- Assist wilderness trip food purchasing, trail menu planning and meal pack out.

Preferred Minimum Education, Experience and/or Certification
- Three to five years meal planning and food service facility support experience.
- Experience managing multiple kitchens in complex environments with overlapping meal service preferred.
- Experience supervising five or more employees.
- Computer literacy required.
- ServSafe Manager certification required.
- Knowledge of sanitation and cleaning systems, use of kitchen tools and equipment required.
Physical Demands
- Able to lift and/or move up to 50 pounds.
- Able to walk and stand for significant periods of time.
Work Environment
- Position is in Shelby, Michigan at Stony Lake.
- Primarily indoor and seasonal outdoor environments.
- Weekend work required seasonally.
- Travel as needed for meetings and site visits.
- Business casual, appropriate attire for setting.
- Hours as required to meet job demands, generally Monday through Friday 8:30 am to 4:30 pm outside of peak program season.
- Evening and overnight duty during the peak program season work sixday weeks in peak season with option to live onsite if preferred.
