What are the responsibilities and job description for the Head Chef position at Ancora Coffee + Bakery?
We are looking for a Head Chef for our Monona Drive location; someone who takes pride in their kitchen, their team, and the product they deliver. At Ancora, we are a small team; our kitchen manager works alongside our sous chef, cooks on the line, helps develop recipes, creates specials, oversees deliveries, maintains kitchen cleanliness and organization, and works alongside our GM to hire and further develop team members. The ideal kitchen manager is passionate about quality food, detail oriented and a skilled communicator and motivator. Strong communication and respect for all team members and customers is required.

Kitchen Manager Responsibilities:
- Manages back-of-house operations during scheduled shifts that include staff support and scheduling. This position reports directly to cafe GM.
- Ensures that kitchen operations and staff are following all established food safety standards; maintains a culture of safety-first
- Staffs, trains and develops team members through ongoing training and coaching.
- Be highly proficient in line cooking, prep work, cleaning and organizing; leads staff by example. No one is above any task in our café.
- Prepares back-of-house schedules and ensures that areas of responsibility are staffed properly for all shifts.
- Carefully observes kitchen operations and addresses any issues. Provide feedback and suggestions both up and down the chain of command
- Identifies operational opportunities to build sales, control costs, and improve efficiency and implements plans to address. Manage labor and food costs to ensure cafe profitability
- Manage the purchasing, receiving and storing of food products to minimize waste
- Collaborates with the BOH Operations Manager to develop recipes for new menu items and organize proper training of staff on menu changes. Communicates operational changes by the BOH Operations Manager to the back-of-house staff
- Fosters and leads by example with open communication between back-of-house and front-of-house staff.
- Organizes and completes daily cleaning/maintenance checklist as well as proper deep cleans.
- Ensures routine equipment maintenance is being performed
Required Skills:
- ServSafe Manager Certified, or able to acquire certification within 90 days of hire
- Ability to work on your feet for eight hours a day
- Must be able to lift at least 40 pounds at a time on a regular basis
- A *minimum* of 2 years previous experience in a commercial kitchen required AND/OR 1 year previous supervisory experience required
- High level of professionalism and respect for teammates and customers
- Comfortable working in a fast-paced environment
- Cleanliness and proper knowledge of food safety is key
- Excellent verbal communication and organization skills
- A working knowledge of Google Suite is strongly preferred but but not required

Job Types Available: Full-time (40hrs) - 2 days off per week
Compensation:
- Salary: $40,000-$50,000 DOE tip pool
- Additional wages from tip pool ($5 to $7 hour)
- Structured Performance Based Quarterly Bonus
