- Protects the assets of the operation while creating inviting a work environment that is clean, organized, and well-maintained with strict adherence to alcohol handling regulations.
- Hires and develops a well-trained, empowered, cleanliness focused, dedicated team of employees that works hard and takes initiative and pride in their work.
- Without having direct leadership responsibility for the Chef and kitchen staff, works closely with the kitchen to create a one-team environment.
- Is a revenue-generating machine that embraces technology and organizational systems to appropriately manage inventory, par levels, and labor costs to drive revenue and make the operation efficient and profitable.
- Writes the schedule, manages payroll, and orders product for restaurant and venue

Essential Duties And Responsibilities Include The Following

- Develops and implements successful F&B promotions, strategies, policies, and procedures to meet and exceed the resort's F&B goals.
- Hires, trains, manages schedule, and develops an excellent staff.
- Develops relationships with members, constantly touching tables, and personally providing a warm and welcoming environment.
- Ensures all AFR policies, procedures, control systems, and other established operating plans are understood and implemented by the F&B staff.
- Works closely with Group Sales to plan for, prepare, and execute banquet functions.
- Creates and implements business operation plan, budget and policies and procedures.
- Maintains positive customer service programs to ensure customers receive high quality customer service at all times.
- Develops positive relationships with outside vendors.
- Manages venue budgets, including all purchasing of equipment and supplies, plans for maintenance and capital improvement projects to ensure budgetary goals are met or exceeded.
- Directs the security, safety, sustainability and risk management practices of the venues.
- Inspects buildings, grounds, and facilities on a regular basis to ensure conformance to high operational standards.
- Ensures legal compliance of alcohol sales/licensing.
- Develops and implements Employee Training Programs.
- Works with the Marketing Department to implement and manage marketing programs and the websites for the venues as well as special events.
- Enforces NM Health Department Food Service and sanitation standards.
