This "Working Chef Director position" maintains efficient operation of the dietary department, directs, and supervises all staff and ensures adequate follow through of their duties.
ESSENTIAL FUNCTIONS:
The following duties are normal for this position. These are not exclusive or all-inclusive. Other duties may be required and assigned.
- Plans and directs food program and culinary activities
- Directly manage dinning team employees as a primary duty: Hire, provide coaching to employees, lead training for employees, when necessary terminate employment in accordance with HR process and policies.
- Manage a current record of staffing levels, job tasks, and any other documentation as required. Ensures that this information is available for reference when necessary.
- Manage staff training for all dinning personnel
- Plans and directs food preparation and culinary activities
- Prepares food required for meal times and catered events
- Manage the daily operations of the kitchen
- Modifies menus and create new ones that meet quality standards
- Estimate food requirements and food/labor cots
- Reviews policies and procedures periodically and makes suggestions for changes as necessary
- Ensures department compliance with federal, state and local standards
- Responsible for the cleanliness and safety of all work areas in the dietary department
- Ensures that legible weekly and daily menus are available to residents and the public. Attends and participates in Dining Services and Resident meetings. Actively maintains documentation of suggested changes and addresses them as appropriate. Communicates actions taken to the appropriate parties.
- Prepares a proposed annual budget for approval by the manager. Responsible to monitor and adhere to the budget as directed by the manager.
- Maintains working relationship with state department of health and other agencies in the community. Coordinates with their services through working and transfer agreements.
- Participates in community activities. Represents facility at meetings as requested by the manager.
- Reviews the physical environment and operation of the Dining Services department on a regular basis. Ensures appropriate use and up keep of any equipment and directs repair and replacement of faulty equipment when necessary.
- Monitors and documents freezer, refrigerator, food and water temperatures. Keeps documentation on file for reference when necessary.
- Participates in all QA studies. Accumulates data and provides written evaluation of QA results.
- All other duties as assigned.
- Two or more years of experience of Dining Services management or the delivery of food services.
- Experience in a supervisory position is desirable, but not required.
- Needs to have knowledge of food handling operations and ability to create nutritional menu that addresses special diets.
- Knowledge of public relations desirable.
- Must have knowledge of Personnel Administration, Federal and State regulations.
- Must possess the ability to interpret financial statements and keep abreast with the changes in the Assisted Living Facility industry.
- Ability to read, write and follow written and oral instructions in the English language.
- Serve Safe Certification or State approved safe food handling certification
- Criminal record clearance or criminal record exemption, as required by law
Salary : $40,000 - $50,000
