Train new hires, completes inventory orders and ensures that inventory is put away and stored in accordance with food safety guidelines. Assists in preparing for all audits and inspections.
Operations
ESSENTIAL/CORE JOB-SPECIFIC DUTIES AND RESPONSIBILITIES
- Performs cooking and food preparation duties per standardized recipes, including therapeutic diets. Cooks food in quantities according to the menu and number of persons to be served.
- Informs supervisor of any problems encountered related to the efficient and safe operation of the kitchen.
- Assists in preparation for audits/inspections in accordance with agency policies and procedures.
- Assists supervisor in menu preparation and planning.
- Places inventory order twice a week. Ensures accuracy and proper levels of inventory. Unloads inventory within food safety guidelines. Ensures that inventory is properly stored in accordance with policies and procedures.
- Required to complete shifts if there is a vacancy or staff call out.
- Ensures clients receive the correct diet. Communicates with dietitian, nurses, supervisor and cooks to confirm appropriate diet is being served.
- Communicates with dietitian if there is a nutritional issue with the client that needs to be addressed.
- Performs test tray audits and acts accordingly.
- Practices excellent HACCP guidelines and hygiene practices and observes all infection control policies for proper food handling, storage, hand washing, glove wearing, uniform grooming, etc.
- Takes the lead on cleaning initiatives and ensures that cleaning is completed, including maintaining the work area; washing and sanitizing dishes, counter tops and all other equipment used in meal preparation; sweeping/mopping of floors, etc.
- Ensures all expired food is thrown out and proper dates are located on foods per policies and procedures.
- Ensures correct documentation for all records on the Gadsden Campus including the Weekly Cleaning List, the Cold Storage Log, the Dishwashing Concentration Log and the Food Temperature Log. Submits records to supervisor each month.
- Completes the Monthly Kitchen Inspection for each unit on the Gadsden campus, communicates any findings and submits to supervisor.
- Trains new hires within established policies and procedures. Completes Training Contact Forms, Programmatic Training, and all other trainings.
- Ensures all Gadsden Kitchen Staff complete educations in Relias within the time guidelines.
