By working closely with the GM, this individual will help to facilitate optimum efficiency, maximize profits, and provide exceptional customer service by performing the following duties individually and through Managers.
Essential Duties & Responsibilities
- Oversee Food & Beverage operations during events to ensure client satisfaction and quality control standards
- Provide the highest customer service excellence.
- Negotiate contracts and agreements for necessary Food & Beverage activities and services at the facility.
- Direct and administer the execution of the operating and financial plans and documents; to include operating revenue and expense budgets; capital expense plans and budgets.
- Evaluate facility practices for ongoing improvements to better reflect the needs of the Client and the facility and/or to improve the efficiency and safety of operations, in compliance with organization standards
- Analyze facility operations such as catering, concession sales, and labor costs to prepare budget and to maintain cost control of facility operations.
- Inspect food service facilities to ensure equipment and building meet state and local health laws, as well as internal regulations
- Maintain cost and quality control standards and reviews inventory controls with Food & Beverage Management team.
- Work closely with Chef and Catering Sales Staff to update catering menu as needed, based upon industry trends, client requests and cost factors/profitability.
- Inspect and sample prepared foods to maintain quality standards and sanitation regulations.
- Evaluate existing venue food & beverage and alcohol-related sponsorship programs at venues and work with Food & Beverage team to enhance the visibility of those sponsors; find new potential sponsorship and revenue-generating opportunities and partnerships within the Oklahoma City Convention Center facilities.
- Coordinate with Marketing Manager to generate more community & ASM Global awareness of department success stories and develop new public relations opportunities to promote food & beverage capabilities (chefs, unique menu items, etc.).
- Manage relationships with building clients and respond to challenges, requests, and issues from the general manager and ownership (City of OKC).
- Must be able to work in a fast-paced environment.
- Ensures all staff adheres to State & Local Alcohol enforcement regulations.
- Enforce all liquor laws & adhere to all health department regulations.
- Ensure compliance with all Savor Food & Beverage policies and procedures.
- Required to speak and understand basic English well enough to converse with customers, supervisors, and employees.
- Maintain a professional work ethic.
- Follows all rules and regulations which apply to the food & beverage operations and to ASM Food & Beverage Division.
- Maintain a cooperative, team-like attitude in working with other Department Directors, managers and employees (including other departments).
- This position requires the ability to work flexible, sometimes long hours which include nights, weekends, and holidays.
- As a Director, you will be required to attend weekly GM/Directors meeting as part of OKCCC Management Team
- Responsible for interviewing, hiring and training employees; planning, assigning and directing work; appraising performance; rewarding; disciplining employees in conjunction with Human Resources department; addressing complaints and resolving problems.
- Supervise and recognize human resource and personnel problems, deal constructively with conflict, supervise and motivate personnel, provide counsel on routine and sensitive personnel matters and execute applicable solutions.

Education And/or Experience
- Bachelor’s Degree in Food & Beverage Management or related hospitality industry field desired
- Minimum 5 years industry experience in management level position with three (3) of those years in a management function in a convention center, large hotel or stadium/arena; or equivalent combination of education and experience.
- Previous responsibilities of inventory, cost control, ordering, receiving, & stocking of supplies and products.
- Must have current Oklahoma Liquor License
- Food handler certificate required from Health Department.
- Possess skills and experience in contract negotiations, business law, labor relations, union contracts, purchasing procedures and supervising personnel.
- Engage in much decision making that is generally governed by procedure and guided by policy.
- Demonstrate knowledge in the terminology and verbiage of the hospitality industry.
- Plan, coordinate and direct varied and complex administrative operations.
- Respond to crowd control and/or crowd management situations in a prompt and decisive manner during crisis situations.
- Follow oral and written instructions and communicate effectively with others in both oral and written form.
- Organize and prioritize work to meet deadlines.
- Work effectively under pressure and/or stringent schedule and produce accurate results.
