Job Overview

Position Purpose: Report to the Camp Manager and Culinary Manager. Oversee food preparation, production, and control for all food outlets and banquet facilities.

Essential Functions:

  • Adhere to ATCO-NSR site health, safety, and emergency response plans.
  • Provide fresh, seasonal, safe, quality, and varied meals.
  • Adapt to market changes and guest requirements.
  • Develop new products and standards through market research.
  • Maintain food quality and consistency.
  • Manage market/guest demands, profits, and expenses within budget.
  • Set and maintain high standards through recipes and procedures.
  • Lead and support the Executive Committee, Camp Manager, and team.
  • Achieve team goals and guest expectations through effective management.
  • Select, train, and develop kitchen staff, fostering a positive work environment.
  • Create seasonal menus within budget.
  • Ensure compliance with local employment and civil rights laws.
  • Maintain health and sanitation standards (HACCP).
  • Coach and discipline employees, promoting positive behavior and performance.
  • Implement and monitor plans, set targets, and schedule work, ensuring high performance.

Other:

  • Adhere to attendance schedules and company standards.
  • Work varying schedules based on business needs.
  • Attend and participate in training sessions and meetings.
  • Comply with ATCO/NSR rules and regulations.

Supportive Functions:

  • Consult regularly with the Culinary Manager and other departments.
  • Participate in long-range planning and property programs.
  • Mentor and support team members, ensuring their progression and professionalism.

Specific Job Knowledge, Skills, Responsibilities, and Abilities:

  • Fluent in English; excellent communication and problem-solving skills.
  • Strong leadership and people management skills.
  • Operate kitchen facilities with minimal supervision.
  • Proficient in MS Word, Excel, and other relevant software.
  • Knowledge of accounting programs, math, and budget analysis.
  • Exceptional guest relations skills.
  • Extensive knowledge of menu costing, recipes, and food preparation.
  • Ability to analyze data and ensure payroll and production control.
  • Supervise and mentor a diverse team, achieving goals and standards.
  • Conduct safety meetings and training sessions.
  • Handle internal and external guest interactions with patience and diplomacy.
  • Create recipes, theme menus, and food promotions.
  • Train and develop employees with documented sessions.
  • Ensure safety and health standards are maintained.
