The Commissary Manager is responsible for overseeing all aspects of commissary production, inventory management, and distribution to six restaurant locations. This role ensures that batch recipes are executed with precision, and operational systems are continuously optimized for peak efficiency. The ideal candidate is a highly reliable and accountable leader with a deep understanding of production workflows, supply chain from negotiated contracts, pricing and, logistics to locations for raw and prepped product, and system design.
Key Responsibilities:
Operational Leadership & Production Management

Oversee daily operations of the commissary kitchen, ensuring consistency, quality, and efficiency in all batch recipe production.

Ensures Implementation and refinement of standard operating procedures (SOPs) to streamline production, inventory management, and order fulfillment.

Maintain food safety and sanitation standards in compliance with local and federal health regulations.
- Ensures quality control measures to guarantee product consistency across all restaurant locations.
Inventory & Supply Chain Management
Manage vendor relationships to secure timely delivery of raw ingredients and supplies. (Excluding price and contract negotiations).

Optimize inventory tracking systems to maintain accurate stock levels, prevent shortages, and minimize waste.
- Coordinate with restaurant locations to forecast needs and adjust commissary production accordingly.
Systems Design & Optimization

Continuously evaluate and improve production workflows to enhance efficiency and minimize bottlenecks.

Implement technology solutions for tracking production data, inventory levels, and distribution logistics.

Develop scalable systems that support business growth and increased production demands.
- Work closely with operations to ensure seamless integration of tracking and reporting systems.
Leadership & Team Development

Partner with the Commissary Production Manager to recruit, train, and manage a high-performing commissary team, ensuring accountability at all levels.

Set clear performance expectations and conduct regular evaluations to enhance team productivity.
- Ensure staff adheres to all safety, compliance, and operational protocols.
Logistics & Distribution

Oversight and improvement of an efficient distribution system for delivering both prepared recipes and raw ingredients to multiple locations.

Monitor commissary order distribution operation (if applicable) and coordinate with the lead delivery driver as needed.

Ensure accurate order fulfillment and timely deliveries to all locations.
- Analyze delivery routes and schedules for cost savings and efficiency improvements.
Qualifications & Skills:
Proven track record in managing high-volume food production, commissary operations, or large-scale batch cooking.
