Bobby Boy Restaurant Group is looking to hire culinary professionals that enjoy the day to day of the fast paced hospitality industry. We love all things food! That's why we built the best culinary facility that lets us focus on our interests. Our new facility houses a pastry program, laminated dough program, sourdough program, whole animal butcher program, a flour mill, as well as a culinary fermentation lab.
This is a Job posting for the Head Bread Baker of Bobby Boy Restaurant Group. This position will have the highest regards for leadership and responsibility of all things bread. Bread production is a crucial part to all Bobby Boy Restaurant Group concepts.
Job requirements
- know multiple types of bread/dough production (high hydration sourdough focus
- understand the importance in using fresh flour, specialty grains, and quality ingredients
- knowledge of different types of equipment ( 120kl mixers, 4 deck polin deck oven with loader, polin rotating rack oven, divider rounder, divider press, 40in new american stone mill
- ability to organize and execute a production schedule that consist of multiple types of bread for daily delivery and retail sales
- maintain the life of 2-3 starters daily
- gives and receives professional criticism
- has strong organizational skills
- ability to overcome hurdles that the sourdough world throws us
- ability to lead a team of 2-5 people
- can work the early shift of 2-3am start time
- build excitement of bread through creativity and consistency
- control a food cost of our design
- work with a marketing team to share our processes and beautiful food with our guest
- support a local food economy through utilizing our vast supply of local farmers
