We are a premier hospitality company with a 30,000-case DTC wine operation, farming over 200 acres of French and Italian varietals under the Bottaia and Ponte Winery labels. Bottaia Winery offers an elevated experience with a sophisticated tasting room, private cabines, a semi-Olympic pool, a splash pad, and a poolside bar and café—a one-of-a-kind offering in the region.
As our Seasonal Manager, you’ll lead the poolside, bar, and café teams from May through October, ensuring each guest enjoys unforgettable moments while relaxing by the pool, savoring refreshing cocktails, and indulging in delicious café offerings. Our team’s friendly, engaging service creates the laid-back yet lively atmosphere that keeps guests returning year after year.
Job Summary:
This role involves overseeing a vibrant pool area, cocktail bar, and café, ensuring a high-quality guest experience while managing daily operations. As the manager, you will be responsible for leading staff, maintaining a relaxing and fun atmosphere, and ensuring seamless service across multiple areas.
Compensation: $72,000 plus KPIs based on sales metrics – ask about temporary housing
Schedule:
- May – October
- Wednesday – Sunday, 11:00 AM – 6:00 PM at a minimum, based on business needs.

Key Responsibilities:
Operational Management
- Oversee the daily operations of the pool area, cocktail bar, and café, ensuring all areas are clean, well-maintained, and meet safety and health standards.
- Work with the maintenance staff to ensure all areas are in top condition, including cleanliness, equipment functionality, and safety standards.
Staff Supervision
- Lead and manage a team of bartenders, servers, cooks, and pool attendants.
- Provide guidance, training, and support to ensure excellent service standards.
- Create staff schedules based on pool, bar, and café traffic to ensure optimal coverage.
Guest Experience
- Ensure an exceptional guest experience by addressing customer needs and handling concerns.
- Create a welcoming, relaxed atmosphere that encourages guest satisfaction and return visits.
Inventory & Ordering
- Monitor inventory levels for bar and café supplies, ordering products as needed.
- Coordinate with suppliers for timely deliveries.
Event Coordination
- Collaborate with the Event and Banquet team for special poolside events or private functions.
- Ensure seamless execution of promotional activities in coordination with the Marketing team.
Sales & Revenue Management
- Assist in achieving sales targets through promotions and upselling.
- Prepare daily, weekly, and monthly financial reports for the Winery Manager.
- Control expenditures on wine, food, and beverages to align with budgetary requirements.
Health & Safety Compliance
- Ensure all areas comply with local health and safety regulations, including food handling, pool safety, and alcohol service laws.
- Maintain all necessary OSHA and Cal/OSHA documents for compliance.
Qualifications:
- Previous hospitality management experience, especially in poolside, bar, or café settings.
- Strong leadership and team management skills.
- Excellent communication and customer service skills.
- Ability to multitask in a fast-paced environment.
- Knowledge of alcohol service laws and pool safety regulations.
- Ability to handle stressful situations calmly and professionally.
- Availability to work flexible hours, including weekends and holidays.
- Proven experience in restaurant and bar sales, including budgeting, forecasting, inventory, and cost management.
- Experience with TOCK, MICROS, ALOHA, and POS systems.
- Proficiency in Outlook, Excel, Word, and Inventory Control Systems.
- Ability to obtain and maintain a County of Riverside Food Handler’s Card.
- Ability to obtain Alcohol and Beverage Control RBS Certification.
- Must be 21 years or older.
Physical Requirements:
- Ability to stand for long periods, including in inclement weather.
- Ability to lift, lower, push, carry, or pull 40-50 lbs. consistently.
- Ability to bend, squat, stoop, and climb stairs regularly.
