Brays Island Plantation is a private upscale community of 325 homesites situated on 5500 acres. Facilities include an 18-hole Ron Garl designed course, equestrian center, gun club, quail and deer hunting operations, 13-room Inn, tennis courts, fitness center, fishing and boating. Food and Beverage facilities include casual dining at the clubhouse and formal dining at the Inn. Numerous outdoor functions include oyster roasts, trail-ride-and-dines, and weddings in addition to private events at owners’ homes. 7-day per week operation. Estimated revenue is $1m.
Overview
We are seeking a dynamic and experienced Director of Food and Beverage to oversee all culinary operations within our establishment. The ideal candidate will have a strong background in both casual and fine dining, with a passion for delivering exceptional customer service and maintaining high standards of food quality.
Duties
- Manage all aspects of food and beverage operations, including menu planning, food preparation, and presentation
- Oversee kitchen and bar staff, providing leadership and guidance in daily operations
- Ensure compliance with health and safety regulations and maintain cleanliness standards
- Implement inventory control procedures to minimize waste and optimize costs
- Coordinate catering events and special functions to meet customer needs
- Handle cash transactions, monitor budgets, and contribute to financial planning
- Develop and maintain strong vendor relationships to ensure quality ingredients and supplies
Qualifications
- Proven experience in food management, kitchen management, and bar operations
- Strong knowledge of cookery techniques, menu development, and catering services
- Excellent communication skills with the ability to lead a diverse team effectively
- Ability to multitask in a fast-paced environment while maintaining attention to detail
- Understanding of customer preferences and industry trends to drive business growth
- Certification in food safety and sanitation practices is preferred
