This individual will work in our butcher shop with other staff to create premium meat products for our farmers’ markets using our grass fed, locally raised, clean meats & poultry. This individual is directly responsible for:
- Breaking carcasses down into primals and sub-primals
- Portioning primals & sub-primals into individual cuts
- Preparing grinds & cuts for further processing
- Making sausages
- Making bacons
- Using skewers & twine to shape, lace & tie special meat preparations
- Receiving & filling custom orders
- Assisting with packaging & labeling
- Assisting with moving boxes/cases of meat
- Following Safety & Sanitary procedures
- Maintaining a clean work area
- Maintaining sharp tools
- Assisting with recipe testing & creation of new products
This individual must have:
- A passion for creativity and innovation
- Exceptional time management skills & a sense of urgency
- Strong communication skills, ability to read & follow instructions and a desire to contribute to the team
- Ability to be precise and to produce measurable results
- Basic math and counting skills and the ability to learn to use scales & spreadsheets
- Knowledge of animal anatomy and ability to learn the names of cuts of meat
- Knowledge of meat cutting techniques and the ability to cut meat to maximize returns
- Ability to safely use knives, saws, slicers and other cutting tools
- Ability to learn to use bone saws, grinders, mixers, stuffers and other meat processing equipment
- Knowledge of food hygiene and safety requirements
- Knowledge of FIFO systems
- Excellent hand/eye coordination
- Stamina to stand for up to 4 hours at a time and ability to work a 10 hour shift starting at 7 am
- The ability to work on damp, hard floor surfaces in a room that is approximately 55 degrees and occasionally work for a limited time in the walk-in coolers and freezers.
- The ability to work in a room with a reasonable noise level while meat processing machines are operating.
- The ability to walk, reach, bend and stoop as needed and use hand tools for the duration of the workshift
- Must have ServSafe certification
- Physical strength to regularly lift 50 lbs and occasionally lift up to 100 lbs
- Good personal hygiene and be clean and neat in personal appearance
- Professionalism and be honest, competent and respectful
Job Type: Full-time
Pay: $37,000.00 - $52,000.00 per year
