We’re hiring a Program Chef to lead our work with Encore Community Services (Encore)!
Since 2016, we’ve been redefining what it means to be a successful chef by partnering with institutional foodservice programs across the US. Our team brings the systems and solutions to help kitchens consistently and confidently prepare high-quality meals. Demand for our services is growing faster than ever. In the past 3 years alone, we’ve expanded from a team of 5 chefs to a coast-to-coast network of over 60 and counting.
About Our Partnership With Encore:
Located in Midtown Manhattan, Encore provides older adults with a range of caring and quality services to help them live independent and dignified lives.
Since 2019, we’ve been working with the foodservice program to support their operations. The team works out of a kitchen at Encore’s older adult center to provide approximately 150 in-person lunches daily across this site and a nearby residence. They also prepare and deliver approximately 15,000 meals per week to home-bound individuals in Manhattan. All of the meals are scratch-cooked and comply with the NYC Department for the Aging’s nutritional guidelines.
As the Encore team looks to take their foodservice program to the next level, they are eager to bring on a Program Chef to lead the operation. In this role, you’ll work at Encore on a full-time and year-round basis, collaborating closely with organization leadership to support the following goals:
- Consistently serve high-quality food across in-person and delivered meals
- Expand menu offerings based on diner preference
- Run a financially sustainable program
- Increase the scratch cooking capacity of the foodservice program
Although Encore will have ultimate authority over the foodservice program's strategic direction, you'll be a key player in driving change.
What the Position Entails:
You will lead and serve as the point person for all kitchen operations, including all of the following responsibilities:
Operations
- Oversee the day-to-day operations of the foodservice program while staying within budgeted guidelines and adhering to the highest food safety and quality standards.
- Develop and implement a weekly production schedule that ensures meals are ready for delivery.
- Create and oversee staff schedules.
- Implement and oversee systems/protocols for kitchen organization, serving line setup, food storage, HACCP programs, etc. across all sites.
- Roll out kitchen signs and tools across sites from our catalog of training materials. Facilitate the creation of new materials.
- Maintain required records, including those related to food production, purchasing, and inventory as well as all HACCP documentation, including food safety and temperature logs.
Procurement
- Source products/ingredients and find vendors.
- Source smallwares and advise on equipment needs.
- Place all orders.
- Ensure all deliveries are properly received, stored, and rotated.
Recipes/Menus
- Develop recipes and menus in compliance with the NYC Department for the Aging’s nutritional guidelines.
- Develop and implement a plan to roll out new menu items with an eye towards consistency and quality across in-person and delivered meals.
- Plan and execute tastings for new menu items. Gather staff and client feedback and incorporate it into menu planning as appropriate.
- Oversee proper production, portioning, plating, and service of all menu items for meal service according to NYC Department for the Aging guidelines.
Other
- Conduct regular staff training on basic culinary, safety, and operational best practices in accordance with our standards.
- Travel between the kitchen at the older adult center and the residence to monitor operations.
- Hire kitchen staff.
- Interface with Encore clients, employees, and leadership from a wide variety of backgrounds.
- Document your progress in a daily journal and discuss with your Brigaid regional chef during regular Zoom calls.
- Participate in meetings with organization leadership and/or other stakeholders.
- Adhere to all of our protocols and standards as well as those of Encore as outlined in our respective employee handbooks.
- Adhere to all NYC Department for the Aging and Department of Health guidelines and regulations.
- Assist with any other job-related tasks, including, but not limited to, receiving and storing food and supplies, setting up and breaking down kitchens, scaling recipes, preparing, packing and serving food, cleaning kitchens, and doing dishes.

- Understand how to prioritize tasks and manage your time effectively.
Professional Requirements:
- At least 5 years of professional cooking experience in a non-institutional setting, including at least 2 years in a kitchen supervisory role (High-volume cooking experience is a plus.)
- ServSafe Manager certified or the ability to take a Brigaid-sponsored 8-hour ServSafe Manager course and pass the exam during your initial training period
Physical Requirements:
- Ability to travel across sites in an efficient manner (with the possibility of carrying kitchen/culinary equipment during this travel)
- Ability to lift and carry objects up to 50 pounds
- Ability to walk around and stand for long periods of time

A travel stipend of $250 will be offered to each candidate living more than 120 miles away from Manhattan. Should you live further than 120 miles from Manhattan and get offered the position, we will support your relocation to an area commutable to Manhattan by providing you with a one-time, lump sum $5,000 moving stipend (subject to tax).
