Broders’ Pasta Bar is looking for a Chef Della Cucina!
Since 1994 Broders' Pasta Bar has been an award-winning Minneapolis institution serving house made and quality imported pastas and risottos, focusing both on Italian regional traditions as well as seasonal & local ingredients.
As the Chef Della Cucina, you guide the Culinary Operations of Broders’ Pasta Bar. The Chef Della Cucina is focused on providing quality food, service & leadership to the team and guests. Providing consistent leadership that supports the personal, professional and cultural well being of staff, honors the history of the restaurant and Broder Family vision, and maintains financial viability of the restaurant. Collaborating with Leadership to assess current practices, discover new opportunities and look towards the next 30 years of operations.
What you deliver:
Kitchen & Operational Oversight
- Evaluate current SOP’s and station execution. Use assessment process to find areas for improvement, streamlined processes and or increased organization.
- Ensure food safety practices are in place and education is up to date
- Maintain daily prep lists, order guides and transfer systems
- Lead team in setting standards for performance and productivity
- Provide documented feedback and action plans in instances of under performance or policy violation
Culinary Excellence
- Uphold the Broders’ Culinary vision. Develop dishes rooted in Italian cuisine and culture.
- Work with Director of Operations to forecast and develop menu changes
- Focus on quality and consistency in all dishes
- Build understanding into training with staff – showcase what is and isn’t up to standards and why
- Grow a culture of culinary excellence that all team members uphold
Strategic & Financial Planning
- Monitor weekly COGs and revenue reports to ensure ordering & labor support a profitable model
- Maintain all active recipes in Compeat with up to date food costs and menu costing
- Work with FOH Leadership to anticipate and plan for holidays, special events
- Develop and plan monthly dinner boxes (Table 22)
Leadership Contribution
- Participate in the Pasta Bar Leadership team to uphold and fulfill the vision of the Pasta Bar
- Lead the BOH Leadership team and collaborate on conflict resolution, growth opportunities and celebrations
- Build a culture of commitment within the team that supports professional development
- Collaborate with Director of Operations in providing developmental conversations

Qualifications:
- At least 3 years culinary leadership experience, with a minimum of two years in a senior culinary leadership role
- Experience with Italian cuisine
- Experience with sales building, P&L statements, recruiting, training and people management
- Must be 18 years of age or older
Compensation:
65,000.00 – 75,000 annually

The physical demands for this position include reaching, bending, grasping, operating a variety of kitchen equipment and tools, remaining in a stationary position between 4-8 hours, moving intermittently during working hours, communicating information and ideas so others will understand, moving various items weighing up to 50 pounds, spending time in freezers, coolers and in a hot kitchen environment with moderate to loud noise. These physical demands may be accomplished with or without reasonable accommodations.
