Job Description
We’re looking for a skilled and passionate Pitmaster to take the lead on all things smoked and slow-cooked. As the heart of our BBQ operation, you’ll be responsible for preparing high-quality meats using traditional smoking techniques, maintaining cooking equipment, and ensuring every bite is packed with authentic flavor. Responsibilities include:
- Prepare and cook meats using smokers, grills, and other BBQ equipment
- Manage cook times, temperatures, and meat rotation to ensure consistency and quality
- Trim, season, and prep meats following brand standards and recipes
- Monitor inventory of proteins, wood, and supplies—alert management as needed
- Maintain and clean smokers and kitchen equipment daily
- Ensure food is held and served at proper temperatures
- Adhere to all food safety, sanitation, and cleanliness guidelines
- Assist with training team members on BBQ prep and smoking basics
- Work closely with kitchen and front-of-house staff to coordinate service flow
Job Requirements:
- 1–2 years of BBQ or pitmaster experience in a commercial kitchen preferred
- Deep understanding of smoking techniques, meat prep, and BBQ timing
- Ability to manage multiple meats and long cook times with precision
- Strong knife skills and knowledge of meat cuts
- Familiarity with food safety standards (ServSafe certification a plus)
- Ability to lift 50 lbs and stand for extended periods in a hot environment
- Reliable, self-motivated, and detail-oriented
- Flexible schedule availability, including early mornings, weekends, and holidays
- Passion for great BBQ and commitment to consistent quality
