Summary of Duties:
Perform quality work within deadlines with or without direct supervision. Interact professionally with other team members, guests, and suppliers. Work effectively as a team contributor on all assignments. Work independently while understanding the necessity for communicating and coordinating work efforts with other team members and organizations. Maintain strict privileged, proprietary, guest, and employer confidentiality during and beyond the term of my employment. Adhere to all work rules, policies & procedures, and safety standards.
Position Purpose:
To provide high quality, elegant and efficient food & beverage services to guests.
Knowledge, Skills, and Abilities:
- Communicate expectations, lead, and oversee all food & beverage outlets and operations.
- Establish budgetary guidelines for all food & beverage operations.
- Set portion control and pricing that is reflective of the local demographics and within approved guidelines.
- Evaluate equipment needs and make recommendations to optimize efficiency and improve sales.
- Respond to guest feedback and complaints.
- Establish controls to minimize waste and theft.
- Ensure consistency and quality standards are maintained in all food & beverage operations.
- Ensure that all alcohol sales and food safety ordinances and regulations are followed.
- Ensure the highest standards of cleanliness, safety, and guest satisfaction.
- Forecast staffing, hire, train, and schedule team members to ensure staffing levels are adequate for business needs.
- Evaluate, coach, and mentor team members as often as necessary to ensure successful operations.
- Enforce agency rules and departmental policies and procedures.
- Execute payroll and performance management responsibilities as required.
- Evaluate sales and recognize trends in order to recommend business strategies and promotions that lead to increased revenues and profitability.
- Ensure compliance with tip reporting procedures and Title 31 requirements.
- Perform other duties as assigned.
Requirements
Education/Qualifications:
- Bachelor's degree or culinary graduate preferred. Requires a minimum of 2 years of experience managing a fine dining restaurant.
Licensing:
- Must be able to obtain and maintain the required Gaming License
- Requires Food Handler’s Permit
- Requires Liquor License
Work Requirements:
Requires problem solving skills, and the ability to communicate effectively. Position involves prolonged walking, stooping, or bending, lifting, or carrying up to 50 pounds daily. Work is performed in a casino environment with varying levels of lighting, air quality, noise, and / or temperature.
