Butterfield Country Club of Oak Brook, IL is seeking an experienced pastry professional to be their Executive Pastry Chef. The ideal candidate is self-motivated, disciplined, detail oriented and a team player. This individual will be charged with managing production and service for a pastry operation serving 760 member families.
Butterfield Country Club is a family oriented private Club established in 1920. The Club operates year-round, with changes in hours of operation seasonally. Peak business periods are May-September, as well as the December holiday season. The Club closes for four weeks in the winter with limited operations.
Specific job expectations include but are not limited to:
· Mush be fully proficient in all areas of pastry.
· Strong emphasis on cakes, but must be equally proficient in plated desserts.
· Build and maintain strong relationships with management, line level staff and the membership.
· Assist Executive Chef in developing and implementing strategies to control food costs and labor expenses.
· Develop seasonal pastry items to highlight menu offering.
· Maximize hours worked and production time, ensuring efficient use of time and high work output for a team of three.
· Ensure compliance with all food safety and sanitation regulations. Must be able to train and manage staff to high cleanliness and sanitation standards.
· Be a hands-on, engaged leader able to develop pastry cooks.
· Ability to manage full responsibility of pastry kitchen including scheduling.
· Play an integral role in advancing program’s processes, standards and culture towards building a truly dynamic culinary team.
· Assist with communicating in regards to product ordering.
· Effectively communicate with dining room staff to educate and assist in daily staff meetings and their training to offer Platinum level service.
· Assist with inventory management.

Salary and Benefits
The position will offer a competitive compensation package with benefits including health insurance, vacation time, 401k and continuing education support.
Salary : $70,000 - $80,000
