The Lead Cook works alongside the Kitchen Manager and Camp Directors in kitchen operations and kitchen staff management to provide nutritious, well-prepared meals for campers, staff, and guests. Job Functions: As Lead Cook at Camp Granite Lake, your duties will include but are not limited to:
Camp Granite Lake is a summer camp that offers 20-day sleep-away camp sessions for children ages 7 - 17, where they make lifelong memories and friends while enjoying the magic of summer camp in the mountains. We offer over 20 activities, that campers can choose from, all in a remote, mountain setting with a lake onsite.
We are looking for staff members who are interested in helping us build a supportive community; who are willing to work hard, and creating an environment where the decisions we make while at camp and on time-off are made with our responsibility to the campers in mind.

Job Functions: As Lead Cook at Camp Granite Lake, your duties will include but are not limited to:
- Collaborate with the kitchen manager and directly manage kitchen staff during scheduled shifts, as well as training and development.
- Prepare and cook food according to the menu, including camp snacks, off-site meals, and special diets for campers/staff with food allergies, as scheduled.
- Oversee kitchen operations, such as maintaining proper serving temperatures, ensuring proper inventory rotation, and receiving food deliveries with the kitchen manager and steward.
- Oversee both front and back-of-house operations in collaboration with the kitchen manager.
- Oversee the sanitation program for all food preparation areas, storage rooms, the dishwashing program, kitchen restrooms, and the laundry area.
- Two years of experience working in a kitchen in a cooking/managing capacity.
- Experience managing staff in a food service setting (oversight of assigned daily tasks).
- Knowledge of food preparation and service standards, storage of food, and kitchen protocols.
- Knowledge of preparing and serving 200 guests per meal
- Knowledge and understanding of food allergies and special dietary needs.
- Strongly focused on the application of food safety and daily operations - ServSafe Food Handlers Certification.
- Desire to work with and around international staff, young adults and children in a youth development setting.
- Visual and auditory ability to identify and respond to environmental and physical site hazards, including camper and staff behavior, as needed.
- Physical ability to operate kitchen equipment according to safe use recommended methods.
- Ability to lift and carry 50 pounds, a minimum of 100 feet, while at high altitude. Has physical mobility endurance to perform tasks while standing/walking for long periods.
- Must submit health history records and other human resources forms.
- 21 years of age or older.
- Must be fully immunized.
- Culinary degree or/ equivalent experience in institutional food service or catering setting
- Serve Safe Manager Certified
- Previous experience with inventory management
- Previous experience in a camp or camp-like environment
- Kitchen Spanish
