Food Service Director
Position Overview:
As the Food Service Director for AYF Camp Haiastan, you will be responsible for the planning and execution of meals for staff and campers throughout the camping season. The Food Service Director will work in the pre-season to establish relationships with vendors, create summer menus, and place food orders. The Food Service Director reports directly to the Executive Director and works closely with the Summer Director and Health Center Director. This position qualifies as a seasonal employee under the Fair Labor Standards Act (FLSA) and Massachusetts labor laws. As such, seasonal employees are exempt from overtime pay requirements.
Salary:
$300/month (March-May)
$25-$35/Hour (June - August) based on experience
Responsibilities:
- Participate in pre-camp Staff Training Week, and attend staff meetings during the season.
- Establish and maintain strong relationships with food vendors before the summer season
- Set up the kitchen with required supplies, equipment, and materials prior to the opening of camp, and maintain the supplies, equipment, and materials during the duration of the camp’s operation.
- Meet weekly or as often as needed with the Executive Director and Summer Director(s) for planning and evaluation purposes.
- Prepare 3 meals per day (Breakfast, Lunch & Dinner) according to a planned menu and direction from the Executive Director and with coordination from the Summer Director.
- Work closely with the Health Center Director and its staff to ensure all camper and staff health concerns are prioritized
- Coordinate with the Summer Director to prepare occasional (to-go) mobile meals for campers off-site excursions.
- Guarantee food to be in proper quantities, on time, and satisfy the basic expectations of those dining.
- Prepare food inventory and general kitchen status reports to the Executive Director throughout the week.
- Maintain oneself and the kitchen staff with the highest regard for health and sanitation in accordance with the state and local Health Departments.
- Maintain and monitor kitchen and food service equipment and tools with the highest regard for health, sanitation, and safety.
- Safely control food in dry, refrigerated, and frozen storage environments.
- Perform proper inventory control of supplies.
- Perform and utilize management techniques of leftovers to minimize waste.
- Effectively manage personal and on-the-job time as the number of hours on the job may not be consistent each day and can be usually long.
- Maintain kitchen and food service equipment.
- Oversee and monitor Prep Cooks and Kitchen Operations Staff In Training (SIT)
- Advise and report to the Executive Director on the status of food and non-food supplies and expendables.
- Share in supervising kitchen help and dishwashers.
- Oversee and monitor the set up of hot and cold food lines, this requires the Camp Cook to oversee the serving of food on food lines for each meal until “seconds” have been served.
- Take inventory and order food as needed or directed.
- Ability to adhere to a financial budget of around $50,000.
- Close down the kitchen at the conclusion of the season according to procedures.
Requirements:
- At least 21 years of age.
- Possess ServSafe Manager and ServSafe Allergen Certifications.
- High School diploma or GED.
- Minimum of 2 years of food service director experience.
- Ability to read and evaluate written directives, established menus, and follow established food service rules and procedures
- Demonstrate competencies in professional commercial food preparation.
- Knowledge of proper nutritional requirements and food allergies.
- Previous experience in a K-12 school or camp environment is desirable.
- Fluent in speaking, reading, and writing English.
- Demonstrable excellence in communication and record-keeping skills.
- Ability to report to work on a daily and timely basis.
- For a non-Armenian, you will need to gain a basic understanding of the connection between Armenian culture and fellowship.
- Have a sense of humor! This is a fun and nurturing camp for children to learn, grow, and enjoy their camping experience.
- Must be physically fit and able to lift 50 pounds.
