JOB SUMMARY: Supervisory position while Executive Chef and Chef De Cuisine are not available. Directs and supervises under the direction of the Executive Chef and Chef De Cuisine in all aspects of the kitchen operations for the Carillon hotel and SPA. Responsible for preparing guest food and maintaining kitchen sanitation to Board of Health standards.
ESSENTIAL DUTIES AND RESPONSIBILITIES:
• Assist in all administrative duties as directed by the Executive Chef and Chef De Cuisine
• Preparing Mise En Place list for each BEO.
• Responsible for all line cooks during service.
• Assess designated station and if needed, bring up to par.
• Assist with other stations and duties to ensure entire team is up to par.
• Follow all recipes, as specified.
• Responsible for maintaining high food quality.
• Responsible for assembly of recipes in a manner consistent with established procedures.
• Assure that each dish that goes out is prepared to Carillon standards.
• Monitors all food served relative to appearance, temperature, sanitation and quality standards, and portion control.
OTHER DUTIES AND RESPONSIBILITIES:
A. Arrive on time and ready to work.
B. Adhere to Carillon Hotel standards for guest service. Executive Chef, and Chef De Cuisine with inventories, ordering, and cross training as needed.
C. Good guest service skills. Ability to develop and maintain good working relationships with all levels of Carillon hotel staff, vendors, guests and government agencies.
D. Strong analytical and problem-solving abilities.
E. Effectively communicate operational details with coworkers, wait staff and management at all times with immediate follow-up required.
F. Become aware of what is happening in the dining room (e.g., arrival of a large group & BEO’s).
G. Support with Corner Store, ISD and Cabana food requisitions.
H. Maintain a clean and safe kitchen and acknowledge any concern or equipment malfunctions, seeking a solution.
I. Follow all health, safety and restaurant regulations of city and state health guidelines.
J. Control and limit food and labor cost by monitoring and adjusting to business levels and needs of operation.
K. Communicate solutions, problems and new ideas to team members and management.
L. Prepare for and attend all departmental meetings and trainings.
M. Exhibit high level of commitment when required to fill out all operational forms required at all times.
EDUCATION/EXPERIENCE/MINIMUM REQUIREMENTS:
Good verbal and written communication skills. Strong organizational skills and attention to detail.
Food sanitation certificate required.
Good judgment and the ability to maintain confidentiality are critical.
• Certification/License: Food Handler Certificate required.
• Experience: Three or more years’ experience with food preparation preferably in the local market within a luxury hospitality setting preferred.

• Verbal and written communication skills
• Microsoft Word, Excel and Outlook
