POSITIO N SUMMARY
The role of the Test Kitchen Manager is to support the execution of Culinary projects to develop, optimize, and maintain new or existing products, processes, and / or packaging.
This role is essential for Culinary Innovation, as it executes many of the daily tasks to keep the kitchen running efficiently and to validate products and equipment to get them into our restaurants.
ESSENTIAL FUNCTIONS
May perform any or all of the following duties :
- Primary support role for equipment validation projects.
- Tests and evaluates new equipment to be introduced into the restaurant system.
- Develop an understanding of equipment specifications and testing
- Organizes, plans, and / or executes validation activities and product cuttings for approvals.
- Partners with Quality Assurance, Restaurant Food Safety, vendors, and / or suppliers to ensure settings meet cross-functional requirements.
- Identifies and communicates results and / or critical issues that influence project direction.
- Manages daily test kitchen needs, including inventories, ordering, calendar / usage, shipments, etc.
- Develop and execute preventative maintenance plans for all kitchen equipment.
POSITION QUALIFICATIONS / CORE COMPETENCIES
- Approximately two (2) years of experience that demonstrates a commanding knowledge of restaurant equipment, food product research and development, or related field.
- BS in Food Science, Food Technology, Engineering, or a similar scientific field preferred.
- Knowledge of product evaluation and food handling procedures.
- Must have an understanding of experimental designs, data collection and analysis, and excel formulation and graphing skills.
- Restaurant experience preferred.
- Must have excellent planning, prioritizing, organizational and problem-solving skills.
- Strong work ethic; commitment to seeing duties completed at a high standard of quality.
- Must have the ability to effectively plan and deliver written and oral communications.
- Proficient technical skills and analytical abilities.
- Demonstrates the ability to successfully execute clear and concise projects and reports.
WORK ENVIRONMENT
Restaurant Support Center and test kitchen environment; fast-paced, high volume of activity and a deadline-driven environment.
PHYSICAL DEMANDS
- Sitting for extended periods of time, using telephone, typing and / or operating a computer and / or mouse
- Lifting up to 50lbs, moving equipment, standing for extended periods of time
- Travels periodically for activation events and production runs
- Night & weekend hours possible
- Travel for vendor visits, field visits, & production runs up to 15%
