Knowledge of cold prep, proper knife handling, maintain proper temperature, sanitation, light dessert knowledge.
Skills
Must have minimal hearing to hear timers; coordinate with other kitchen staff.
Must have moderate vision to check food quality.
Must have minimal speech communication skills to read production charts/recipes.
Abilities
Position regularly involves lifting food cases and metros weighing up to 70 lbs. Pushing and pulling carts is required.
Regular bending to lift items and supplies. No kneeling.
Mobility - regularly moves all around the kitchen.
Continuous standing - to complete a task, may be stationary for short periods of time.
No climbing required.
No driving required.
Education/Formal Training
High school education or equivalent experience.
Experience
Minimum one year cold prep work or food service related work.
Material/Equipment Used
Chemicals/Agents: Bleach, Lime Away, grease cutter.
Protective Clothing: Hair restraint/hat, gloves, apron and safety shoes, approximately 100% of 8 hour shift.
Knife, cutting board, toaster, mixer, slicer, cold table, food processor.
Environment
Inside 100% of 8 hour shift.

Responsibilities
ESSENTIAL DUTIES AND RESPONSIBILITIES:
- Observe all department rules and regulations, dress code and appearance and behave in a professional manner
- Assit Sous and Executive Chefs with all kitchen operations .
- Prepares and properly garnishes all food orders in accordance with menu specifications .
- Inspect incoming products to ensure they meet food specifications.
- Give personal attention and takes personal responsibility when providing guest service .
- Maintains safety and security of guests and co-workers at all times.
- Performs all duties in a safe manner as outlined in the codes of safe practice and reports all accidents & incidents to supervisor immediately regardless of severity .
- Ensure that food items on the prep station are fresh and to the standard of the chef.
- Maintains SafeServ certificate; Follows all SafeServ and OSHA requirements.
- Ability to assist the Executive Chef with ordering or product by filling out order sheets.
- Understands and maintains a par level of stocks, soups and sauces from the freezer , and how to incorporate that into their daily prep.
- Ability to understand and create their own prep lists and produce from those lists in an organized manor.
- Assists in training new/other employees.
- Ability to work on the front line, in front of guests, and be able to communicate with both our guests and the FOH team members .
- Keeps storage areas neat and organized and has the ability to check in items , receive them and put them away in an organized fashion.
- Maintains cleanliness of kitchen, walk-ins, and their own station.
- Has the ability and understanding the importance or labeling of product , and in organizing product in a safe manner.
- Communicates with the following shift through the use of prep list and notes.
- Keeps up to the minute inventory of all mis en place for the station and kitchen as needed for the purpose of ordering and 86 counts .
- Ability to work with the FOH Management team to communicate with the kitchen and the team .
- Ability to work weekends and holidays when needed.
- Support safe work habits and contribute to a safe working environment at all times.
- A minimum of 1 year of experience in kitchen preparation and cooking.
- Previous experience in fine dining restaurant/kitchen .
- Must be able to communicate clearly with managers and kitchen personnel.
- Ability to work a flexible schedule that may include evenings, weekends and holidays
- Must have the ability to deal effectively and interact well with employees and guests
- Ability to multi-task, manage interruptions, establish work priorities, handle stress, and effectively function in a fast-paced environment
- High school diploma or equivalent
- Culinary training, education preferred.
- Ability to read, comprehend and provide instructions in English, both written and verbal.
- Must provide valid document(s) to work in the US.
- Must have valid Food handler certification
