Description
General Summary of Job Duties
As a Garde Manger you will support the Casino Fandango culinary team and prepare and maintain cold foods such as salads, fruits and vegetables.
Job Function and Duties
- Responsible for vegetables and salads that are displayed and served in the restaurant.
- Prepare a variety of cold foods according to established recipes and standards.
- Responsible for properly stocking and organizing the walk-in refrigerator.
- Ensure all food items are properly labeled and stored.
- Monitor food temperatures, storing food at safe temperatures.
- Maintains a clean and sanitary kitchen.
- Follows safety and sanitation procedures.
- Practices proper knife handling skills.
- Uses and applies proper kitchen safety procedures and basic cooking skills.
- Ensures kitchen and Health Department sanitation requirements are always maintained.
- Other duties as assigned.
Qualifications
Education and Experience:
- Must be at least 21 years of age.
- High School Diploma and/or GED preferred.
- Must have 3 to 5 years working in a kitchen, preparing cold food and salads for counter displays.
- Must have job related tools.
Additional Requirements:
- Ability to maintain clean personal hygiene.
- Ability to work in a team and independently.
- Knowledge of Sushi dishes is a plus.
- Ability to read, write, speak and understand the English language.
- Bi-lingual (English/Spanish) is a plus.
- The ability to maintain composure in a fast-paced, potentially stressful environment.
- Flexibility to work varied shifts, including weekends and holidays, with variable overtime.
- Must have the ability to successfully interact with other team members and management.
- Must be able to tolerate areas containing secondary smoke, high noise levels, bright lights and dust.
- Excellent verbal and written communication skills.
