Job Description
The Bakery Mixer is responsible for prepping formulas, mixing doughs and setting proper scaled weights to create a consistent and workable product. This position must successfully operate the commercial mixer and divider to meet daily production quotas for bread products. This position is responsible for learning and understanding the various dough formulas and correctly measuring and prepping dough as the first operation of the production line. The Bakery Mixer is responsible for keeping track of lot numbers for raw ingredients, maintaining a clean and orderly work area, and following all applicable regulations (GMP’s, quality systems, etc.), policies, and standard operating procedures during their shift.
Responsibilities and Duties
- Proper operation of the commercial automated bread mixer and commercial divider.
- Set divider speed and keep count of dough dropped through the divider.
- Understand the impact various ingredients have on different aspects of the bread, such as taste, texture, weight.
- Correctly read and understand the production sheet or mixing report including changeover times and calculating dough weights into speeds for the divider.
- Accurate measuring of ingredients and track all ingredients by lot code on Mixing Raw Ingredient sheet.
- Understand and follow Dough Mixer SOP
- Lift large amounts of ingredients and place in overhead mixer. Organization of ingredients in preparation of making the needed doughs for the shift.
- Mix doughs according to company formulas. Adjust ingredients amounts based on quality of bread being produced during the shift.
- Adapt to last minute production adjustments.
- Operate machine gauges to set machine pace and complete the dough making process. This involves the ability to calculate accurate stroke count.
- Make visual inspection of dough to determine quality.
- Follow all GMPs, safety regulations, and company policies.
- Maintain cleanliness in the work area.

- Cooking: 1 year (Preferred)
Shift availability:
- Night shift
Work Location: In person
Must be able to lift up to 50lbs.
Must be able to stand on feet for 8 hours.
Must have basic math skills.
