CentraState Medical Center has an employment opportunity available for a Executive Chef. The Executive Chef will be working in our main kitchen. This kitchen serves our patients, and must uphold NJ Department of Health standards. Plans, manages, and directs all food preparation, service, and culinary activities while overseeing day to day operations in the main kitchen. Provides assistance to all retail cafes as needed. Coordinate and plans the weekly hot menu selections in the Green House Café as well as menu selections for Liberty Café working in tandem with the Retail Manger.
Responsibilities
Continuously creates new menus and modifies existing menu selections to keep menus fresh, healthy, always with a focus on outstanding food quality and presentation, specifically, Patient Services, the Greenhouse Café, Physician’s Dining, Liberty Café, and Catering. Engaged with current cooking trends and best practices and incorporates these in our culinary program.
Manages and oversees all catered events. Plans, organizes, coordinates, and follows through with all the many details needed to handle the catering schedule. Assists customers with menu planning and cost estimates and/or quotes. Schedules staffing as needed, room reservation needs; set-up, break-down, table arrangements and décor, and housekeeping needs. Fosters outstanding customer relations and is extremely attentive to administrative and high-profile events.
Ensures all expenditures are within budget. Always seeks opportunities for improved cost control through ongoing competitive purchasing efforts, food production amounts, and with a sharp focus to minimize food waste.
Orders all food and supplies for the operation in conjunction with the buyer and storeroom Clerk.
Coordinates and manages daily operations for the culinary staff and assist with oversight of all service staff members at all service points within the department.
Coordinates and directs the daily routine and operational needs for the Sous Chef position.
Coordinates the orientation and training of all new staff. Plans and coordinates ongoing, hands-on training for all culinary personnel, fostering an engaged work environment for staff.
Plans and arranges for kitchen equipment purchases. Manages ongoing preventative maintenance needs of the kitchen equipment as well as all repairs.
Complies with nutrition and sanitation regulations and safety standards. Complies with all NJDOH and Joint Commission regulations
Rectifies arising problems or complaints. Identifies and resolves problems efficiently.
Performs administrative duties as needed. Maintains an excellent record of kitchen management.
Qualifications
Qualifications:
- Bachelor’s degree in culinary arts or related field, with 5 years experience as an Executive Chef or a food management position.
- Will consider an Associate’s Degree in Culinary Arts or in food management, with 10 years or more of industry and culinary management experience.
- Proficient with various computer software programs; MS Office, restaurant management software, and POS systems. Must have the ability to manage a diverse work team.
- Strong professional, organizational, and interpersonal skills to effectively relate with all members of the healthcare team.
