Charlie Palmer Collective is seeking a Director of Food & Beverage who has a profound interest in food and wine, the drive and experience to oversee a remarkable property with multiple F&B outlets, and a passion to meet the highest standards in our industry. As Director of Food & Beverage, this person is responsible for overseeing the food and beverage program within the property that includes multiple outlets. This leadership role includes the execution and delivery of the highest level of service and experiences for all guests, coordinating service with the culinary and banquet department, maximizing revenue and managing costs and the budget of property dining and bar venues. This role requires a strong background in hospitality management, excellent leadership skills, and a passion for creating memorable dining and stay experiences.
Role and Responsibilities:
- Work with Charlie Palmer and report to property management.
- Manage the F&B operation and success of multiple outlets and amenities.
- Oversee financial performance of all outlets including weekly flash reports, monthly and annual P&Ls and budgets.
- Control costs of all outlets by assisting management, as requested, in purchasing, maintaining effective profit and loss controls and monitoring labor costs following demand patterns, budget and local labor laws.
- Manage, monitor, and constantly improve guest service levels for all outlets and events.
- Manage the look and feel, daily set-up, and arrangement for all F&B areas to ensure proper room preparation and execution for service, including set-up of tables, chairs, linens, table settings, lighting, musicality, and more.
- Spearhead the wine, beverage, and coffee program and create unique offerings.
- Coordinate with the culinary team to oversee all menus changes, pricing and package strategies, and offerings to guests.
- Work closely with culinary teams to execute all services and banquet and catering events and bridge communication with service and culinary staff.
- Work closely with marketing teams to maximize food and beverage sales by identifying and targeting sales opportunities through marketing including promotions and special events and by training staff on “up-selling.”
- Work closely with banquet and catering team to execute BEO and events with accuracy and high guest satisfaction scores.
- Spearhead reputation management program to maximize guest satisfaction by promoting and responding to reviews, handling inquiries, concerns or comments and providing recovery as needed. In addition, acquire feedback from members/guests and co-workers to ensure satisfaction and/or implement service improvement ideas while developing new concepts to ensure guest satisfaction and return business.
- Become well versed in using and maximizing functionality of all restaurant and bar systems and applications.
- Take a leadership role in managing, developing and mentoring all F&B outlet managers and staff.
- Hire, manage, and train service staff in all technical and non-technical aspects of their role including property standards of quality and service.
- Review, maintain, and distribute weekly schedules for staff and communicate changes as appropriate to all.
- Ensure all service staff adhere to the property’s uniform and appearance standards, acknowledgements, policies, etc.
- Evaluate and supervise performance and carry out disciplinary action as needed, in accordance with the property’s policies and applicable state and federal regulations.
- Oversee employee relation issues and reviews incidents with HR team.
- Complete and administer employee performance appraisals.
- Conduct monthly beverage inventories and quarterly China, glass and silverware inventories.
- Opens and close all F&B outlets on a regular basis.
- Conduct regular pre-shift, pre-meal and/or pre-event meetings with all necessary staff.
- Make rounds of all food and beverage outlets to ensure member/guest needs are met and management and staff have support.
- Maintain accurate daily and weekly punch details for service staff and processes daily sales reports and other reports to ensure service levels are met and exceeded.
- Protect property guests by training staff in and adhering to all safety, sanitation, food preparation, food storage and alcohol beverage control policies.
- Follow and adhere to all property SOPs, policies and procedures.
- Stay in touch with industry trends and remain innovative.
Prerequisite Qualifications:
- Minimum 5 years’ experience in a qualified position and property food & beverage division
- A passion for hospitality, food and beverage, and the guest experience
- Experience overseeing a wine program
- Strong organizational & creative problem-solving skills
- The ability to comfortably lead a team in a busy atmosphere
- Creative & team oriented
- Must have experience with restaurant technology and applications
- Must have excellent computer skills
- Fine Dining Experience a plus
