Performs semi-skilled work preparing meals, cleaning utensils and kitchen, ordering food, and performing related work as apparent or assigned. Work is performed under the moderate supervision of the Kitchen Supervisor.
Physical Requirements
This work requires the regular exertion of up to 25 pounds of force and occasional exertion of up to 50 pounds of force; work regularly requires standing, speaking, hearing, use of hands and fingers, handling, feeling, reaching with hands and arms, tasting or smelling, frequently requires pushing, pulling, lifting and repetitive motions and occasionally requires walking, sitting, climbing, balancing, stooping, kneeling, crouching or crawling; work has standard vision requirements; work requires vocal communication to express or exchange ideas orally and to convey detailed or important instructions to others accurately, loudly or quickly; work requires hearing to perceive information at normal spoken levels and to receive detailed information through oral communications; work requires preparing and analyzing written or computer data, visually inspecting small defects and/or small parts, using measuring devices, operating machines and observing general surroundings and activities; work occasionally requires wet, humid conditions (nonweather), working near moving mechanical parts, exposure to extreme cold (non-weather), exposure to extreme heat(non-weather) and exposure to the risk of electrical shock; work is generally in a moderately noisy location (e.g. business office, light traffic).

- Prepares and cooks food in accordance with the menu, including any special diet menus;
- Operates standard cooking equipment such as ranges, mixers, food choppers, deep fryers, and refrigerators;
- Maintains cleanliness and sanitation of cooking and serving materials and equipment;
- Prepares plates and trays prior to washing;
- Scrubs, scours, and washes cooking utensils, ranges, preparation surfaces, mixers, and steamer;
- Orders, receives, and stocks food supplies and materials;
- Maintains the organization of the kitchen;
- Rotates materials and supplies in storage according to date of expiration;
- Ensures sanitation requirements are met in accordance with North Carolina guidelines;
- Performs other duties as assigned.
- General knowledge of materials and methods used in preparing foods on a large scale and of the use and care of utensils and equipment;
- General knowledge of food values and nutrition;
- Skill in cutting and carving meat;
- Ability to establish and maintain effective working relationships with associates and inmates assigned to kitchen duties.
