Position Summary:
The Director of Food and Beverage oversees all aspects of food and beverage service at Chevy Chase Country Club, ensuring an exceptional experience for members and guests. This leadership role is responsible for managing front-of-house (FOH) operations, coordinating with the culinary team, and supervising service staff. The ideal candidate is a proactive leader with excellent organizational skills, a keen eye for detail, and a passion for delivering high-quality service.
Key Responsibilities:
Oversee all food and beverage areas, including restaurants, bars, and event spaces.
- Ensure proper setup of dining rooms and event spaces, including table settings, linens, glassware, and décor.
- Develop cocktail program and beverage incentives
- Confirm service staff adhere to uniform and appearance standards.
- Conduct daily pre-shift, pre-meal, and pre-event briefings to prepare the team.
- Monitor and maintain pool and recreation areas to club standards
- Monitor service quality through regular inspections and bi-weekly quality control audits.
- Hire, train, and manage service staff, fostering a positive and respectful team culture.
- Develop and maintain staff schedules, ensuring appropriate coverage for all operations.
- Conduct performance reviews and address employee relations issues in collaboration with HR.
- Provide ongoing coaching and training to improve staff performance and service consistency.
- Partner with the Events team to plan and execute large parties, weddings, and special occasions.
- Work closely with the Head Chef to develop customized menus for events.
- Manage all aspects of the bar and liquor program for events, including inventory and compliance.
- Monitor department budgets, ensuring food and beverage costs align with company standards.
- Analyze liquor and menu pricing, implementing updates as needed to maintain profitability.
- Conduct weekly beverage inventories and monthly audits of china, glassware, and silverware.
- Implement strategies to control costs, including labor management and effective purchasing practices.
- Ensure guest satisfaction by addressing inquiries, concerns, or feedback promptly and professionally.
- Regularly engage with members and guests ("table touches") to ensure a personalized and memorable experience.
- Develop new concepts and initiatives to enhance member satisfaction and drive repeat business.
- Maintain compliance with all safety, sanitation, and alcohol service regulations.
- Ensure opening and closing procedures are followed for all service areas, including the restaurant, bar, and pool.
- Collaborate with other departments, including Golf, Pool, Kitchen, and Banquets, to ensure smooth operations.
- Manage clubhouse maintenance needs and pool/recreation area standards.
- Acts as Manager on Duty when all other management staff has departed.
- Cultivate a respectful and harassment-free work environment.
- Lead by example, promoting teamwork, accountability, and a positive work culture.
- Take initiative to solve problems and implement service improvement ideas.
- Ensure appropriate supervision on the floor at all times to uphold club standards.
Qualifications:
Proven experience in food and beverage management, preferably in a club or hospitality setting.
Strong organizational, communication, and leadership skills.
Ability to manage budgets and control costs effectively.
Knowledge of food and beverage trends, including cocktail and beverage program development.
Availability to work a flexible schedule, including evenings, weekends, and holidays.
