Server Steps of Service and Expectations

  • Greet Guests at door within 30 seconds of arrival, walk them to a table or bar seat, or add them to the waitlist
  • Greet Guests at table or bar within 60 seconds of them being seated
  • Welcome them to our establishment, introduce yourself, and briefly provide guests with recommendations and a ‘menu tour’ providing information that will simplify their ordering experience and help it not seem too overwhelming to the guest.
  • Take the order
  • Ask the guests what they would like, what spirits they enjoy, what type of cocktail they are looking for. Your job is to guide the service for the guests, helping them find a drink they will enjoy. For example, if someone doesn’t want to drink something that is adventurous, recommend a drink that is friendly and not too polarizing.
  • Ask to check IDs of the guests and a card to get a tab started. Swipe the card, wait for the green pre authorized sign, and then ring in the drinks accurately and using correct table and seat numbers.
  • While waiting to run drinks:
  • Check on running side work, the needs of your other tables, always think of what your next two actions are, and organize them based on urgency and efficiency.
  • Drinks should be at the table ten minutes after they are sent to the bartenders. If they are taking longer than 10 minutes, check back with the table and let them know that the drinks are on the way, almost finished etc..
  • Run drinks for your teammates and the tables you're responsible for
  • Help run drinks for your tables and those of your coworkers, they should not be sitting on the bar for more than 30 seconds.
  • After a few sips or 2 minutes check back with them to make sure they are being enjoyed, and see if they need anything.
  • Maintain high-quality service:
  • Continue to check on the guests throughout the service, walk by with water, looking at the guests to see if their drinks are empty, if they are less than half full offer them another round. We should never miss out on the sale of a cocktail because no one was there to take their order.
  • Anticipate the needs of the guests, ex. if they’re sitting on the patio in the middle of the summer, make sure they have plenty of water.
  • Blow people away, go the extra mile to make sure people have a memorable experience.
  • Closing tabs and cashing people out:
  • When guests have stopped drinking and seem ready to cash out, ask them if they would like you to bring them the check.
  • Always keep drinks ordered by seat numbers to make sure that separating checks does not become overly complicated.
  • Make sure to give guests a genuine thank you, and take a moment to reflect with them and make sure that they’ve had a good time during their visit.
