What are the responsibilities and job description for the Head Cook - Camp Forbes position at City of Cleveland?
- Oversee daily operations within the food service area
- Follow state mandated menu according to the nutritional guidelines by the state of Ohio
- Record food consumption and submit weekly “Daily Menu Production Worksheet”
- Supervise kitchen staff - oversee that all food preparations and sanitation processes are being implemented
- Order all food products, eating supplies, cooking equipment and sanitation supplies
- Check-in and review all expiration dates on food deliveries
- Record date received on all food items, if not already pre-dated from vendor
- Record date opened on all food items if not completely used
- Review and submit all invoices supplied by vendor for food products and supplies received
- Monitor thermometers on all refrigeration units daily and record readings on chart
- Monitor food temperatures and water temperatures
- Maintain records of delivery and usage for all linen (i.e. aprons, towels, sheets)
- Responsible for making sure that all linen is accounted for and ready to be returned to vendor on designated day
- Complete daily/weekly inventory reports
- Contact maintenance worker when needed to sweep and mop kitchen floors, clean restrooms and remove garbage
- Review, adjust and initial staff timesheets – report any absence calls to manager
- Report any work-related issues with staff to manager
- Report any broken or missing equipment to manager
- Maintain a clean kitchen area including all kitchen equipment, service supplies, counter tops, appliances and dishwashing stations
- Maintain a clean and organized office area
