What are the responsibilities and job description for the Assistant Chef position at City of Salem Human Resources?
Performs semiskilled work ensuring the safe preparation of food for catering and concessions, managing the kitchen, assisting with the supervision and training of staff, assisting with the daily operations of the catering division, and related work as apparent or assigned. Work is performed under the limited supervision of the Chef. Continuous supervision is exercised over all personnel within the team.
Essential Functions
- Ensures the safe preparation of food for catering and concession events on and offsite.
- Checks daily inventory of kitchen; stocks concession stands; controls, records, and assesses daily purchasing of all foods to ensure proper levels of inventory and quality products; picks up supplies as needed.
- Sets up rooms onsite and offsite for events.
- Supervises staff; assigns, directs, trains, and inspects the work of staff; coaches, counsels, and evaluates staff performance; assists with scheduling of kitchen, wait, and concession staff.
- Prepares concession stand reports for Civic Center, Moyer Sports Complex, and Spartan Field.
- Manages the kitchen; ensures that personnel in kitchen area handles, prepares, and stores food in accordance with the U.S. Department of Agriculture's guidelines.
- Assists Food and Beverage Manager with preparing and making bank deposits as needed.
- Assists clients and guests as needed.

Special Requirements
Obtain Commonwealth of Virginia Health Department ServSafe® certification within six months of hire. Valid driver's license in the Commonwealth of Virginia.
Education & Experience
High school diploma or GED and considerable experience cooking and serving food in volume operations, or equivalent combination of education and experience.
Knowledge, Skills, & Abilities
Thorough knowledge of kitchen sanitation and safety measures used in food handling and in the operation, cleaning, and care of utensils, equipment, and work areas; general knowledge of the practices, procedures, and regulations relating to food service operations; general knowledge of the principles and practices used in ordering, receiving, and storing food in large quantities; general knowledge of budgeting and accounting practices and procedures; ability to plan and supervise the work of subordinate employees; ability to prepare reports; ability to establish and maintain effective working relationships with food and beverage managers, food vendors, associates, other City staff, and the general public.
