JOB SUMMARY:
Under general supervision, performs routine restaurant preparation, managing the kitchen and staff.
ESSENTIAL JOB FUNCTIONS:
• Oversee all food production used in the restaurant, banquet functions, catering, tournaments, and other outlets, properly train staff in food preparation ensuring the food is technically correct, economical and adheres to safety and sanitation standards.
• Develop the menus used in the restaurant, banquet functions, catering, tournaments, and other outlets with the assistance of Food and Beverage Manager using standard recipes and techniques for food preparation and presentation which help to ensure consistent high quality, minimized food cost, with respect to portion control and selling prices.
• Maintain inventory and management systems to include the purchase and receiving of various products and supplies to meet guidelines set for quality and pricing; prepare and oversee necessary data for applicable parts of the budget, projects food cost, labor, and other costs and monitors actual financial results to take corrective action as necessary to help ensure financial goals are met.
• Recruit, hire and train kitchen staff to maintain proper and optimum staffing levels, evaluate staff on job performance and accuracy.
OTHER JOB FUNCTIONS:
• Plan, staff, set up and execute tournament and catering buffet style food service, both on and off site.
• Ensure all safety, sanitation, energy management and equipment preventive maintenance plans and repairs are in continual use and in a timely fashion.
• Structure safeguards of all food preparation employees by implementing training to increase their knowledge about safety, sanitation, and accident prevention principles.
