Purpose of Position:
The Food Service Manager is responsible for the day-to-day operations of ADS’ kitchen programs (Jail
Kitchen/ADS Kitchen/Pizzas) and the scheduling of ADS supervisory staff.
Minimum Training and Experience Required to Perform Essential Job Functions
A high school diploma or its equivalent and a technical degree in food preparation or related field is required.
Food Manager Certification is also required. A combination of education and experience will be taken into
consideration.
Essential Duties and Responsibilities
The following duties are normal for this position. These are not to be construed as exclusive or all-inclusive.
Other duties may be required and assigned.
Manage day-to-day operations of Jail kitchen, ADS kitchen, and Pizza kitchen.
Manage food inventory through appropriate order placements.
Maintain Food Manager Certification.
Develop and implement weekly menus for kitchen programs.
Plan, supervise and direct staff regarding special diet requirements of the various kitchen programs.
Negotiate food contracts with appropriate vendors.
Complete and maintain appropriate billing and monthly revenue reports.
Develop and monitor best safety practices for entire area of responsibility.
Develop and implement sanitation policy(s) and procedure(s) as regulated by county, state and federal
laws.
Develop and implement Hazard Analysis Critical Control Points (HACCP) program for all areas of
responsibility.
