Job Requirements:
- Assists in managing day-to-day kitchen operations, coordinate prep lists and food production schedules and ensure food quality, taste and presentation.
- Strive to not only know all stations, but be an expert at all stations in the kitchen.
- Expedite during service when required.
- Control food cost by training kitchen staff on proper food preparation, eliminate waste by ensuring rotation and proper production amounts.
- Ensures that all kitchen employees consistently adhere to uniform, grooming and appearance standards (to be set by chef and sous chef).
- Along with Executive Chef, establish goals for the kitchen, anticipate and resolve problems concerning all facets of the kitchen, anticipate trends, enact approved profitable and cost saving ideas.
- Assist Executive Chef with menu development and ensure adherence to recipes and product specifications. Train kitchen staff on all new menus.
- When the chef is not in the kitchen, the sous chef should act as the chef – making decisions, regimentation of checklists, cutting staff appropriately, overseeing service, as well as communication with FOH, executing pre-shifts, orders, or any other tasks the executive chef would be controlling\
- Assist in establishing and maintaining a regular cleaning and maintenance schedule for all kitchen areas and equipment
- Attend all required meetings and trainings
- 4 Cooking experience
- 3-5 years previous experience in culinary supervisor or manager positions
- Ability to interact positively with supervisor, management, coworkers, guests and the public to promote a team effort and maintain a positive and professional approach
- Excellent reading, writing and oral proficiency in the English language
- Computer literate – proficient in Microsoft Word, Excel and attentive to email correspondence
- Continuous standing and walking most of the shift
- Lifting items weighing over 20lbs. Push/pull force of minimum 12lbs.
- Work in extreme temperatures such as freezers (-10 degrees F), kitchens ( 110 degrees F) and various outdoor conditions for one hour or more
- Ability to handle knives and perform cutting skills on work surfaces of various heights
- Requires grasping, writing, standing, sitting, walking, repetitive motions, bending, climbing, listening and hearing ability and visual acuity
