Epicurean Group is a Contract Food Service Management Company that is headquartered in Northern California and is dedicated to sustainable dining. We specialize in corporate and campus restaurants, fine arts dining, and distinctive community dining, and we provide exceptional catering services for discerning customers.
Job Summary
Primary Duties and Responsibilities :
- Food : Plan and Execute Menus
- Implement Food programs according to standards outlined in Proposal and per Epicurean Food Books and Sustainability Standards
- With the Chef, plan, develop and implement the seasonal menus for Cafe and catering operations
- Meet with management team to plan and develop Activity, Promotions, and Sustainability Calendar
- Coordinate monthly marketing & promotional material, Parent / Community letters, programs
- Oversee costing out of all menus to know the correct selling price and profit margin
- Create Marketing strategies to enhance business revenue, customer satisfaction. Ensure that these plans are implemented according to Epicurean standards as outlined in contract
- Oversee all daily food service activities
- Financial : Manage Account Budget
- Thorough knowledge budget and security of unit capital assets and original investment
- Ensure Accounts Receivables are current (30 days), per contract
- Reviews unit inventory system each quarter with DM. Ensure inventory updated weekly
- Input, research variances, and verify inventory weekly
- Reconcile regular and flex scheduled hours and payroll hours weekly
- Complete knowledge of payroll system, procedures, laws, and deadlines
- Meet pricing structure for unit in Café and Catering with DM approval
- Meet or beat Café and Catering Food and Labor budget. Monitor variances weekly
- Implements / monitors consistent-accurate hiring / office / accounting procedures to meet accounting deadlines
- Manage Labor cost by forecasting, flexing up or down as needed, cross-training, utilizing part-time student or on-call labor or on-call catering staff
- Client : Customer and Community Relationships
- Responsible for weekly financial reports to headquarters including client billing.
- Interact with community support staff, administration and maintenance as needed.
- Create forums to solicit feedback from clients / customers regarding customer service and food
- Investigate potential new catering clientele by working with Community Event dept. and marketing bi-annual "Chef's table," Guest Chef and Pop-Ups
