At Cooks Underground, the kitchen porter is tasked with keeping the kitchen clean, sanitary,organized and in good working order. This means setting up and managing the dish pit,keeping the dishes caught up throughout a shift, maintaining a clean work environment forcooks throughout the shift and keeping the organization of the kitchen so things are where theybelong, keeping cooks and other team members working efficiently. The porter is alsoresponsible for some light prep and assisting with inventory control and organization. A portersposition includes but is not limited to : Keeping kitchen equipment well maintained and clean.Keeping dishes cleaned, sanitized and organized.Keeping floors clean and swept throughout the day and scrubbed to finish the day.Ensuring deep cleans are performed and general maintenance of equipment.Wash all dishes, pots, pans and other wares used in the restaurantCleaning grease traps and oil disposal.Maintaining kitchen hoodsScrubbing floors and cleaning floor drainsSweeping, mopping and other janitorial tasks in the kitchenLight prep work and portioning of food itemsKeeping the work environment safe and efficient
