- Prepares and assists in the preparation of vegetables, salads, desserts, meats, and bakery goods.
- Assures that the immediate work area and equipment is kept clean and in good working order.
- Oversees the work of inmates and assists in clean-up after meals; prepares and cooks food or secures portions of food from the general meal to fill various diet orders.
- Prepares special diet orders, including salt-free, liquid, diabetic, fat-free, high vitamin, soft, low residue, bland, high calorie diets.
- Selects food items appropriate for a prescribed diet.
